Pasta In Homemade White Sauce is a incredibly delicious and creamy dish prepared using basic ingredients from your kitchen.
Pasta is one of my favorite comfort food. It is hearty, filling, tasty and super easy to make. Whether I am hungry after a long day at work, or need to prepare a late night snack, or pack lunch box for my family during the morning rush - pasta is generally my go to dish. There are in fact gazzillion types of pasta shapes, pasta sauces and recipes. While I try several of them on a fairly regular basis, most of those times I am so busy that I do not end up clicking photos to share the recipe with all of you. Over the past year several of you have requested me to post pasta recipes that use homemade sauces. Today, I am going to share with you one of my all time favorite and very basic and easy to make pasta prepared with homemade white sauce or bechamel sauce. The sauce recipe calls for very basic ingredients, which I am sure you can find in every kitchen and you will see shortly that it is super easy to put together.
The trick is to use medium-low flame to cook the flour until light golden and aromatic, and to keep stirring the sauce as it cooks and thickens to desired consistency. Once the sauce is cooked you can take it to a whole different level by adding some freshly grated nutmeg, your choice of cheeses and cooking and stirring it further till the cheese melts. It is really hard to mess up with this kind of sauce 🙂
Add your choice of herbs and veggies to make the pasta even more wholesome. In this recipe I have added some chopped sun-dried tomatoes cured in olive oil and some sliced kalamata olives. Give this recipe a try and let me know how it turned out. Pasta In Homemade White Sauce
Ingredients
- 6 oz Pasta of your choice (180 gram)
- 1 tablespoon Olive oil
- ½ Onion , finely chopped
- 2 cloves Garlic , finely chopped
- 1 or 2 Green chilies or Serrano pepper, finely chopped
- ½ teaspoon Dried parsley
- ½ teaspoon Dried basil leaves
- 4 oz Mushroom , chopped
- ½ Capsicum / Green bell pepper, chopped
- Salt , to taste
For the white sauce
- 2 ½ tablespoon Olive oil
- 2 tablespoon All purpose flour
- 1 ¼ cup Whole Milk
- 1 slice Cheese (I have used Fontina cheese)
- 1 tablespoon Parmesan cheese
- Nutmeg , a small pinch
- ¼ teaspoon Black pepper powder
- Salt , to taste
Other ingredients
- 2 tablespoon Sun-dried tomatoes , chopped
- 1 tablespoon Olives , chopped
- Cilantro / Parsley / Basil leaves, chopped for garnish
Instructions
Step 1
- Heat oil in pan. Add the chopped onion and pinch of salt and saute till onion becomes translucent.1 tablespoon Olive oil, ½ Onion, Salt
- Now add in garlic, green chilies and saute for another one minute.2 cloves Garlic, 1 or 2 Green chilies
- Add in the mushroom, parsley, basil and saute till mushroom develops some color.½ teaspoon Dried parsley, ½ teaspoon Dried basil leaves, 4 oz Mushroom
- Finally add the capsicum and saute for one or two minutes.½ Capsicum
- Transfer this to plate. Keep this aside.
- Cook the pasta according to the package instructions while you start preparing the sauce in the next step.6 oz Pasta
Step 2
- In the same pan prepare the sauce. Add 2 ½ tablespoon of olive oil and all purpose flour and saute it on medium-low heat for 2 minutes until the paste cooks and becomes smooth and light golden in color. Do not allow it to brown.2 ½ tablespoon Olive oil, 2 tablespoon All purpose flour
- Add in the milk and stir it constantly until the mixture bubbles and thickens.1 ¼ cup Whole Milk
- Now add in the cheese slice, parmesan, salt, nutmeg, black pepper powder and cook for another 2 minutes. The sauce is ready.1 slice Cheese, 1 tablespoon Parmesan cheese, Nutmeg, ¼ teaspoon Black pepper powder, Salt
Step 3
- To this sauce, add in the sauteed ingredients (from Step 1), cooked pasta (from Step 1), olives, and sun-dried tomatoes and mix well till combined.2 tablespoon Sun-dried tomatoes, 1 tablespoon Olives, Cilantro
- Garnish it with some more olives, sun-dried tomatoes, and cilantro/parsley if desired.
- Pasta in Homemade White Sauce is now ready. Serve hot with bread and enjoy.
Notes
- I started with 1 cup of milk and added additional ¼ cup for desired consistency.
- Add more milk depending on the consistency desired.
- If you like it cheesy, increase the amount of cheese in the recipe.
- You can substitute olive oil with butter or vegetable oil.
- If you like it spicy add pinch of cayenne powder.
- Use fresh or canned mushrooms.
- I have used dried herbs. You can substitute it with fresh ones if desired.
- Vary the ingredient amount as per your taste.

The red ones are sun dried tomatoes. I have added one green chilie for the spiciness and it tastes good.
