Rustic Whole Wheat Bread is a vegan bread that is more dense with whole wheat flour yet delicious with a great texture. This bread has a crunchy crust and is moist and dense inside.

Whole wheat has high fiber and iron content and is thus a healthier option compared to regular bread. This can be served for breakfast, lunch or dinner with side of pasta or soup or even with hummus. You can also make croutons with this bread and use it in a soup recipe. Will post the recipe for the same soon.
Preparation time : 10 minutes + 3 hours rising + 40 minutes baking
Serves : 1 loaf
Ingredients for Rustic Whole Wheat Bread
Whole wheat flour – 3 cups
Molasses – 1/4 cup
Vegetable Oil – 1/4 cup
Active dry yeast – 1 packet or 2 1/4 tsp
Salt – 1 1/4 tsp
Sugar – 1 tsp
Warm water – 1 cup
Sesame seeds – to sprinkle
Steps to prepare Rustic Whole Wheat Bread
Step I
- In a bowl, add warm water, sugar and mix well. Sprinkle yeast and leave it undisturbed for 10 minutes. Let the yeast activate.
- Now add salt, molasses, vegetable oil and flour and mix well to form a soft, yet tight dough.
- Grease the bowl with oil. Place the dough and cover it and keep it in warm place for 2 hours till its increased in size.
Step II
- Flatten the dough and give it a desired shape.
- Place the dough on greased baking pan and cover it with a damp towel or plastic wrap and let it rest for another 1 hour in a warm place.
Step III
- Preheat the oven to 350 degree F.
- Brush the top of the risen dough with water and sprinkle sesame seeds.
- Bake for about 35 to 40 minutes or until you get hollow sound when tapped from bottom. Let it cool down for sometime.
- Rustic Whole Wheat Bread is ready. Serve and enjoy!
Tip:
- Non-vegans can substitute molasses with honey.
- You may have to increase or decrease the amount of flour in the recipe based on the weather conditions.
- During winter, for warmer temperature preheat the oven to 150 degree F and rest the dough.
- This dough may not double in size unlike regular bread dough.

For me 1/4 cup was sufficient to give a delicate flavor of molasses. You may vary the amount if you like a strong flavor!
