Heat oil in a non-stick pan on high heat. Add onions, garlic, and ginger and stir-fry them for 2 minutes.

Add celery and continue stir-frying for another 1 minute.

Next, add carrot, capsicum, green beans, spring onion, green peas, and any other vegetables (broccoli, mushroom, baby corn, zucchini, cabbage, or any other veggies of your choice) and stir fry for 2 to 3 minutes. The rawness should go, but the veggies should still have that crunchiness. Do not overcook.
1 medium Carrot, 1 medium Bell pepper, 5 Green beans, 3 piece Spring onions, ½ cup Green peas
Add black pepper powder, vinegar, soy sauce, salt to taste and stir for a minute. You can add any other spices or seasonings of your choice at this point.
½ teaspoon Black pepper powder, ½ teaspoon Vinegar, 2 tablespoon Soy sauce, Salt
Finally, add the cooked rice and toss till everything is combined for 2 minutes. All this must happen in high flame for excellent results.
Vegetable Fried Rice is ready. Serve hot, and enjoy.
