Easy and Delicious Blueberry Galette | Best Blueberry Crostata
Blueberry Galette or Blueberry Crostata is a simple and easy to make, yet so impressive fancy dessert where the sweet and fresh blueberries are encased in perfectly crispy, flaky, and buttery homemade pie crust. For the pastry dough or pie crust (Feel free to use store bought pie crust)
- 1 ½ cups All purpose flour (Maida)
- ½ cup Butter , cold, cubed,1 stick (Use vegan butter for vegan version)
- ½ teaspoon Salt
- 2 teaspoon Sugar
- ¼ to ½ cup Ice cold water , divided (add as needed in 1 tablespoon increments)
For the Galette filling
- 3 cups Blueberries
- 2 tablespoon Cornstarch
- ⅓ cup Sugar (adjust to taste depending on sweetness of berries)
- 1 ½ teaspoon Vanilla extract
- ⅛ teaspoon Salt (a pinch)
- Zest of lime (½ lemon)
- Juice of ½ lemon (or lime)
Other Ingredients
- 1 large Egg , for egg wash (for eggless or vegan version you can brush with cream or milk or simply water)
- 3 tablespoon Sugar Turbinado Sugar or coarse Sugar to sprinkle on top
- Ice cream for serving if desired
STEP 1 - Prepare The Pastry Dough Or Pie Crust. If Using Store Bought Pie Crust, Skip This Step
In a large mixing bowl, add flour, salt, and sugar. Cut the butter into the flour mixture using a pastry cutter or fork until butter is well blended. Small speckles or pieces of butter combined with flour, sugar, and salt are what we are aiming for.
1 ½ cups All purpose flour, ½ cup Butter, ½ teaspoon Salt, 2 teaspoon Sugar
Sprinkle ice-cold water over this flour mixture 1 tablespoon at a time and mix it using your hands till it comes together to form a dough ball. The amount of water depends on the brand of flour too. If you add too much water, then add extra flour and adjust accordingly. You may also use a food processor to complete the above two steps.

Warp the dough in plastic wrap and keep it in the refrigerator for about 30 minutes.
STEP 2 - Prepare The Filling
In another bowl, add blueberries, cornstarch, sugar, vanilla extract, salt, lemon zest, lemon juice, and toss. Here you can adjust ingredients as per taste depending on the sweetness of the fruit.

STEP 3 - Assemble The Galettes And Bake
Preheat the oven to 400 degrees F.
Unwrap the dough onto a floured surface and divide them into 3 balls to make 3 galettes.
Working one at a time, adding extra flour as needed, use a rolling pin to roll each ball about 1/16 to ⅛th inch thick. Carefully transfer this to a parchment-lined baking sheet. Alternatively, you can make one galette of 12-inch or14-inch round or 6 mini galettes.
Divide the blueberry filling into 3 galettes at the center of the dough leaving 1 inch on the edges so that it can be folded up to encase the filling.
Gently fold the crust edges up in an overlapping fashion and pleat the dough. Make sure there are no cracks.
Brush the folded galette crust with egg wash or water or milk, and then sprinkle it with sugar.

Bake for 25 to 35 minutes or until the crust is golden brown and the fruit is bubbly. Baking time varies depending on the size, thickness of the galette. Transfer the galette to a wire rack and let it cool completely.

- I have used just blueberries for the galette filling. You can make a mixed berries galette or a galette with any combination of fruits. Some best blueberry pairings are blueberry and peaches, blueberries and pecan, blueberry and nectarine.
- The amount of filling you add to the dough can be varied as desired.
- Vary the amount of sugar to taste.
- For best results, use seasonal fruits. Summer for berries
- If you are making a galette, in the fall season, nothing can beat the apple galette. Simply sauté chopped apples in cinnamon, sugar, and butter and then use this as a filling.
