  • cup Corn starch check tips
  • ¼ cup Milk
  • ½ teaspoon Salt adjust to taste
  • 1 large  Egg
  • Oil for frying

Instructions

  • In a bowl, add one egg, whisk and keep it aside.
    1 large  Egg
  • Take another bowl, add the boiled potatoes and mash them thoroughly. To this, add cornflour, milk, salt, egg, and mix until smooth and well combined.
3 large Potatoes, ⅓ cup Corn starch, ¼ cup Milk, ½ teaspoon Salt
  • Fill your piping bag or plastic bag, or Ziploc bag with the potato mixture. Take a small piece of parchment paper, practice piping the dough into a spiral, and check if the dough holds its shape and is not sticky.
  • Heat oil in a pan for frying. To check if it’s hot, drop a piece of potato mixture, and it should sizzle and come up immediately.
  • Once the oil is hot, press the upper portion of the piping bag to squeeze out the potato mixture and form a spiral pattern of one or two rounds directly into the oil. Check the video for better understanding.

Notes

  • Every batch of potatoes has different moisture and starch content and therefore behaves differently. Adjust the amount of flour (corn flour, all-purpose flour, potato starch, etc.) until you get the right consistency. One-third cup measurement given in the recipe above is a good starting point.
  • I have prepared plain salted fries as my kids don't like spicy food. You can add chile powder, pepper powder, pepper flakes, and garlic powder if needed to the mixture.
  • If you are a cheese lover, you can even add parmesan cheese to the mixture.
  • You can substitute cornflour with potato starch, all-purpose flour, or even rice flour.
  • I forgot to add egg to the mixture first and added it later. Please do not skip eggs as the fries won't turn out good. It will absorb too much oil and not hold its shape in oil.
  • Crispiness will vary depending on the intensity of the flame you fry, the flour used, and the potatoes' texture.
