Hasselback Potatoes | How to Make Hasselback Potatoes

Hasselback Potatoes are one of the easiest potato side dishes you can prepare for your loved ones during Thanksgiving or Christmas. The end result is garlicky baby potatoes or new potatoes with crispy edges like french fries and a creamy mashed potato-like texture in the middle. I bet anyone can't stop after eating one.
Hasselback potatoes are by far one of the best side dishes to serve with your Thanksgiving turkey, Easter ham or pork, barbeques, casseroles, salads, etc. I can go on.

Ingredients

  • 24 Baby Potatoes New potatoes. If unavailable, use 6 to 8 large potatoes.
  • 2 tablespoon Butter, melted
  • ¾ teaspoon Salt (adjust to taste)

For Herbed Butter Oil Mixture

  • 2 tablespoon Butter, melted
  • 2 tablespoon Coconut oil or Olive oil
  • 2 tablespoon Cilantro or Parsley, finely chopped
  • 1 teaspoon Garlic powder
  • ½ teaspoon Salt (adjust to taste)

Instructions

Cut the Hasselback Potatoes

  • Nicely wash, drain and pat dry the potatoes.

  • Cut one small portion of potato on one side to create a flat base. Place the flat surface at the bottom. Use the chopstick as a guide on two sides and cut straight down till it touches the chopstick into thin or thick slices, the way you prefer. Check out the video here
  • Preheat the oven to 425 degrees F. Line your baking pan with parchment paper and keep it aside.

Brush the potatoes with butter.

  • Arrange the cut potatoes in a single layer in the baking pan. Brush each potato with melted butter and sprinkle some salt.
    2 tablespoon Butter, melted, ¾ teaspoon Salt (adjust to taste)
  • Bake for a total of 30 to 40 minutes, depending on the size of the potatoes.

Prepare Garlic Herbed Butter Oil

  • Add melted butter, oil, cilantro, garlic powder, salt, and mix in a pan. 
    2 tablespoon Butter, melted, 2 tablespoon Coconut oil or Olive oil, 2 tablespoon Cilantro or Parsley, finely chopped, 1 teaspoon Garlic powder, ½ teaspoon Salt (adjust to taste)
  • Halfway through the baking process (around the 15-minute mark), brush each potato with this herbed garlic butter oil and continue baking for another 15 to 20 minutes or until the edges are crispy and inside is cooked and creamy. 
  • Once it comes out of the oven, brush again with remaining garlic herbed butter oil, serve and enjoy.

Hasselback Potatoes in an Air Fryer - Alternate cooking method

  • Preheat the Air Fryer to 350 degrees F.
  • Place 6 to 10 baby potatoes brushed with plain butter and sprinkled with salt in the air fryer basket, and cook for about 10 minutes. Add more potatoes if your air fryer basket is larger.
  • After 10 minutes of cooking time, brush the potatoes with herbed garlic butter, and cook in the air fryer for additional 5 mins.
  • After a total of 15 minutes of cooking time, remove from the air fryer basket, and brush with herbed garlic butter.
  • Repeat for remaining potatoes. Serve and Enjoy!

Notes

Tips
  • You can skip salt when preparing herbed butter oil if using salted butter. 
  • In this recipe, you can use only butter or only oil or combine the two. The choice is yours. 
  • Instead of garlic powder, minced garlic can be used
