  • 3 Fresh and Ripe Mangoes, diced
  • 1 Small Red onion, chopped
  • 1 Green bell pepper, chopped
  • 1 Red bell pepper, chopped
  • 2 tablespoon Coriander leaves, chopped
  • Juice of 1 lime or lemon (adjust to taste)
  • ¼ teaspoon Salt (adjust to taste)

Instructions

  • Combine mango, onion, red bell pepper, capsicum, cilantro, and salt in a bowl. Drizzle lemon juice.
    3 Fresh and Ripe Mangoes, diced, 1 Small Red onion, chopped, 1 Green bell pepper, chopped, 1 Red bell pepper, chopped, 2 tablespoon Coriander leaves, chopped, Juice of 1 lime or lemon, ¼ teaspoon Salt
  • Using a large spoon, mix everything. Let this sit for 10 to 20 minutes to get the best flavor from the salsa.

Notes

  • Because my kids love mangoes and mango recipes, I have not added jalapeno to avoid the heat. Instead, I added green bell pepper. If you are not serving this for kids, add jalapeno, habanero, or serrano to make it spicy.
  • Salsa tastes the best when made fresh and served within 24 hours. However, you can refrigerate for 4 to 5 if there are any leftovers which I doubt as they are so delicious and addictive.
  • I have used small red onion. If using large ones just add ½ red onion.
