Pineapple Butter Cake | Best Pineapple Cake Recipe

Ingredients

  • 3 cups Pineapple (chopped, about half pineapple)
  • ½ cup Butter , 1 stick (or use brown butter or ghee)
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • ¼ teaspoon Cardamom powder
  • 1 cup All purpose flour
  • ½ teaspoon Salt
  • ½ teaspoon Baking Soda
  • ½ teaspoon Baking Powder
  • cups Sugar
  • cup Brown Sugar

Instructions

Step I

  • Preheat the oven to 350 degrees F ( 180 degrees C) and grease a 9-inch baking pan.
  • In a pan on medium-high heat, add 1 stick of butter. Once the butter has melted, add chopped pineapples and saute for about 10-12 minutes.
    3 cups Pineapple, ½ cup Butter

Step II

  • In a large mixing bowl, beat two eggs, and then add vanilla extract, and the rest of the dry ingredients (cardamom powder, flour, baking powder, baking soda, salt, sugar, brown sugar) and mix until just combined.
    2 large Eggs, 1 teaspoon Vanilla extract, ¼ teaspoon Cardamom powder, 1 cup All purpose flour, ½ teaspoon Salt, ½ teaspoon Baking Soda, ½ teaspoon Baking Powder, ⅔ cups Sugar, ⅓ cup Brown Sugar
  • To the above batter, add sauteed pineapple along with melted butter and mix well.
  • Transfer the batter to the greased pan and bake for 35 to 40 minutes or until a toothpick inserted at the center comes out clean.
  • Pineapple Butter Cake is ready. Serve and enjoy
  • You can sprinkle top with confectioners sugar or whipped cream and fresh chunks of pineapple or both.

Notes

Tips:
  • Check the cake at the halfway mark. If the top is browning faster, then cover it with aluminum foil.
  • Skip salt if you are using salted butter.
Some variations to the pineapple butter cake recipe below
  • You can substitute brown sugar with regular sugar. The color of the cake will change accordingly.
  • To make it more aromatic and take it to next level, you can substitute butter with brown butter.
  • You can also combine fruits like mango or apple or even shredded coconut into the recipe.
