  • 2 Tall serving glasses

Ingredients

  • 1 tablespoon Basil Seeds or Sabja Seeds or Tukmaria seeds
  • 1 cup Water
  • 50 g Falooda Sev or thin vermicelli
  • 4 tablespoon Rose syrup or Rooh Afza, use more if needed
  • 2 cups Whole milk chilled
  • 1 cup Strawberry Jelly optional
  • 4 scoops Vanilla Ice cream

Instructions

Soak sabja seeds or basil seeds

  • Soak the sabja seeds in 1 cup water for at least 30 minutes.
1 tablespoon Basil Seeds, 1 cup Water
  • Soak till it has absorbed water and forms jelly like mixture.

Cook falooda sev or falooda noodles

  • Cook the falooda sev in boiling water for 4 to 5 minutes or till it softens. Drain it and keep it aside. Check the package for cooking instructions. I have used falooda sev prepared with corn flour.
    50 g Falooda Sev

Rose flavored milk

  • In a bowl, add chilled whole milk, rose syrup and mix. Check for the sweetness and flavor. If you like more flavor and sweetness increase the amount of syrup.
2 cups Whole milk, 4 tablespoon Rose syrup

To arrange Falooda (Adjust the quantity of ingredients depending on the size of the glass.)

  • Add around 3 tablespoon of soaked sabja seeds followed by half of cooked falooda.
  • Now add half of the rose milk. Add strawberry jelly as desired.
    1 cup Strawberry Jelly
  • Add two scoops of vanilla ice cream. Garnish it with tutti frutti and drizzle some rose syrup or rooh afza.
4 scoops Vanilla Ice cream, Tutti Frutti or nuts, 4 tablespoon Rose syrup
  • Repeat this to prepare another serving of falooda in a tall glass.
  • Serve immediately and enjoy.

Notes

  • Falooda is one of the best make-ahead desserts for your Diwali, Thanksgiving, or Christmas party. You can soak basil seeds, prepare the jelly, or even cook the noodles and keep them in the refrigerator 2 to 3 days in advance.
  • For the best results, see that all items are chilled.
  • Assemble only when you are ready to serve.
  • You can check how to make the jelly if you love to add it.
  • The sweetness from the rose syrup is sufficient for the faluda. Based on the brand of rose syrup you choose, add or skip the sugar.
  • If sabja or chia seeds are unavailable, you can add boiled sabudana or tapioca pearls.
  • For kulfi falooda, use kulfi (Indian frozen dessert) instead of regular vanilla ice cream.
  • To make it easier, falooda mixes are also readily available in the market.
