Nectar Plum Cake or Honey Plum Cake
Nectar Plum Cake is a classic cake with soft and moist texture, served with caramelized fruit topping that is perfect for holidays, parties or anytime of the year. This cake is also popularly known as honey plum cake.

- ¾ cup Vegetable Shortening / Dalda
- ½ teaspoon Baking soda
- 1 ½ teaspoon Baking powder
- 1 teaspoon Salt
- ¼ cup + 2 tbsp Truvia Nectar or ( ¾ cup of honey)
- 2 Eggs
- 2 teaspoon Vanilla extract
- 1 cup Whole milk
- 3 cups All purpose flour
For the topping
- 2 tablespoon Butter
- 1 teaspoon Lemon juice
- ¼ cup + 1 tsp Truvia Nectar ( ½ cup of honey)
- 3 Plums
- Pistachios roughly chopped for garnish
Step I ( Prepare the Cake)
Preheat the oven to 350 degree F. Grease your 9 inch baking pan and keep this aside.
In a large bowl, add shortening, baking soda, baking powder, salt, Truvia® Nectar, egg, vanilla extract and beat till it is light and fluffy. Now add whole milk, all purpose flour and mix till it is combined. Do not over mix. Pour the batter into greased baking pan.
Bake for about 40 to 45 minutes or until toothpick or knife inserted comes out clean. Let this cool for about 10 minutes. Remove from the pan and place it on a wire rack so that it cools down completely.
Step II ( Prepare the topping and assemble)
Wash and chop the plums lengthwise.
In a non-stick pan add butter, lemon juice, Truvia® Nectar and once it starts to bubble add the plums and cook for about 3 to 5 minutes till they are blanched and lightly caramelized and the juices are released from them. With a serrated knife slice about ⅛th inch top of the cake to get a flat top surface. Poke holes using a toothpick or a fork. Spoon plums and any juices on top of the cake.
Nectar Plum Cake is now ready. Garnish it with pistachios. Serve and enjoy.
- If you find it difficult to find fresh plums add in any fresh fruit of your choice. Some of my favorites include peaches, apples, pineapples, pears, and figs.
