Corn Flour Bread or Corn Bread or Cornmeal flatbread | How to make makki ki roti or makki di roti

Corn bread or Makki ki roti is a traditional healthy and delicious unleavened flat bread very popular in Punjab, India. This is prepared specially during winter using maize flour (makki ka atta) or cornmeal on tandoor oven or griddle (cast iron pan or tava). Makki roti can be prepared in less than 30 mins!

Ingredients

  • 1 cup Corn flour or Maize flour (makki ki atta)
  • ½ cup Whole wheat flour
  • ¾ cup Warm water (add as required)
  • Oil or butter for cooking bread or rotis
  • Salt , to taste

Instructions

  • Add the corn flour, wheat flour, salt to taste and mix.

  • Now add warm water little by little and knead to make firm dough. This dough should not be sticky. Be careful while adding water. Add it only in increments. Cover it and keep it aside for 20 minutes.

  • Take small piece of dough on your working surface, Shape them into ball and pat it with your palm and fingers to form bread of medium thickness. It is difficult to roll out this bread using rolling pin. So I generally prefer making mini flatbreads
  • Heat tava / griddle and grease with butter or oil. Place the rolled flat bread on it and drizzle some more butter. Cook on medium high flame till one side is little browned. Then flip on the other side and drizzle some more butter. Cook until it becomes golden brown on both the sides.

  • Repeat the process for remaining dough.
  • Corn Flour Bread or Makki Ki Roti is ready. Serve hot with butter, Sarson ka Saag or Mustard greens gravy and enjoy.

Notes

  • If you find it difficult to find the corn flour in the stores near you then grind the dried corn kernels to smooth powder and use it in the recipe.
  • It is easily available in any Indian store as corn maize flour OR makki ka atta. You also get Bob's Red Mill Corn Flour in most grocery stores in the US.
