Ingredients

For the onion rings batter

  • ½ cup All purpose flour or Maida
  • cup Corn starch or corn flour
  • ½ teaspoon Red chile powder or cayenne or paprika
  • Salt , to taste
  • ¾ cup Club soda or ice cold water or sparkling water

Other ingredients

  • 2 large Onions (large or medium), chopped in circles
  • 2 cups Panko bread crumbs or more as needed (you can also use crushed cornflakes)
  • Oil , for frying

Instructions

Step 1

  • Cut the onions into rings of approximately ¼ inch thickness. Separate the rings from each other. (check the video for extra crispy onion rings)
    2 large Onions
  • Prepare the batter - In a bowl, add flour, cornstarch, chili or paprika or cayenne powder, salt to taste, and mix once.
½ cup All purpose flour, ⅓ cup Corn starch, ½ teaspoon Red chile powder, Salt
  • Add ice cold water or soda starting with ½ cup and add more only if needed. Continuously whisk so that there are no lumps and a smooth batter is formed. It should be of medium consistency.
    ¾ cup Club soda

Step 2

  • In a plate or shallow pan, spread the bread crumbs.
    2 cups Panko bread crumbs
  • Dip each onion ring into the batter (prepared above in Step 1) so that it is completely coated in the batter. Remove and then coat each one of them in bread crumbs. Keep this aside.
  • At this point you can freeze the onion rings in Ziplock bags and fry it as and when required.

Step 3

  • Heat oil in a pan on medium flame. Oil should not be too hot or too cold. Just drop the batter and check if it sizzles and comes up quickly. This means the oil is ready for frying.
    Oil
  • Depending on the size of your pan, drop one or several onion rings. After a minute or two flip and fry till it is crisp and golden brown all around.
  • Transfer fried onion rings to a paper towel to absorb any excess oil.
  • Extra Crispy Onion rings are ready. Serve and enjoy.

Notes

  • You can add salt directly to the batter as above or once the onion rings are fried you can simply sprinkle it on top.
  • Divide the Panko breadcrumbs into two portions. This is because when you dip the battered rings, the panko crumbs gets sticky. So you if you divide it into two portions, you can switch to the second half when the first half becomes sticky.
  • Amount of club soda or water may vary depending on weather condition and the brand of flours used.  The batter should be smooth and not too thin. So always add liquid little by little.
  • You can use milk or eggs to prepare the batter. The taste and texture will vary accordingly.
  • You can also add 1 or 2 tablespoon of instant mashed potatoes. This will give you super crunchy and crispy onion rings.
  • You can add garlic powder, pepper powder, and herbs to the batter if desired.
