INSTANT POT TURMERIC GARLIC RICE

  • Add 1 cup water and 1 cup rice to your Instant Pot. Secure the lid with vent in sealing position. Set the manual or pressure cook button for 4 minutes. Let the pressure release naturally for 10 minutes, and then quick release any remaining pressure.
  • Fluff the rice with a fork. Remove it in a separate bowl and let it cool completely before you start making the rice.
  • Turn the Instant pot to SAUTE MODE. Add oil. To this, add onion and garlic and saute for 3 to 5 minutes or until fragrant. Add turmeric powder and salt and saute for 10 to 15 seconds.
  • Next, add carrots, green peas, corn, bell peppers and saute for another 2 to 3 minutes.
  • Finally, add the cooked rice and toss until combined or heated through. Turn off instant pot.

Notes

  • My kids don’t eat spicy food, so I generally do not add any spices. Feel free to add red pepper flakes or pepper powder if desired.
  • You can include fresh herbs or greens if needed.
  • Ground cumin or whole garam masala spices can be added.
  • To make it more rich and flavorful, you can even cook the rice in coconut milk or broth.
  • I have used coconut oil to make the recipe. You can use olive oil, desi ghee, or butter.
  • Use any long grain rice like basmati or flavorful rice such as jeera rice or jasmine rice. Leftover rice also works best with this recipe.
