Rice Kesari Bath / Saffron Ghee Rice

Rice Kesari Bath or Saffron Ghee Rice is a rich and classic dessert enhanced with aromatic flavors from saffron and loads of ghee or brown butter. This can be prepared in under 30 minutes.

Ingredients

  • ½ cup Rice
  • 5 tablespoon Ghee / Brown butter
  • 7 to 8 strands Saffron (soak in a tablespoon of warm water or milk)
  • ¼ cup Sugar , plus additional 2 tbsp, check tips
  • ¼ teaspoon Cardamom powder
  • 2 tablespoon Almonds , chopped
  • 2 tablespoon Cashews , chopped
  • 2 tablespoon Raisins , chopped

Instructions

Step 1 - Cook rice

  • Cook the rice in any method that you are comfortable with (stove top or pressure cooker). 
    ½ cup Rice
  • Using a fork or fingers, just spread it out on a plate so that the rice grains are separated. Keep this aside.

Step 2 - Roast nuts and raisins

  • Heat ghee in a pan on medium to medium-low flame. Add cashews and almonds, and saute. When it starts to turn light golden, using a slotted spoon, transfer it to a plate.
    5 tablespoon Ghee, 2 tablespoon Cashews, 2 tablespoon Almonds
  • To the remaining ghee, add raisins and frequently stir till they become plump. Remove them using a slotted spoon and keep aside with cashews and almonds.

Step 3 -

  • To the same pan add the cooked rice (from Step 1) and mix well. 
  • Add sugar, soaked saffron threads, and keep sauteing it on medium to medium-low flame for about 6 to 10 minutes till the ghee starts leaving the sides of the pan. 
    ¼ cup Sugar, 7 to 8 strands Saffron
  • Add cardamom powder, roasted dry fruits and nuts (from Step 2), and mix well. Switch off the flame. 
    ¼ teaspoon Cardamom powder
  • Kesari Bath or Saffron Ghee Rice is now ready. Serve and enjoy.

Notes

  • The sugar to rice ratio is 1:1. The sweetness was enough for my family so reduced it by 2 tbsp. You can adjust this as per your taste.
  • Vary the amount of dry fruits and nuts as per your taste.
  • More the ghee, better the taste :-) 
  • Basmati Rice or Jeera Rice is used traditionally. 
  • To enhance the flavor you can also add in 2 cloves in the recipe.
