Ingredients

  • 3 Sweet Potatoes, cubed
  • 1 Red onion, diced
  • 1 bulb Garlic, crushed and peeled
  • 1 Jalapeno or Serrano, chopped
  • 1 tablespoon Rosemary, fresh & chopped
  • 3 tablespoon Melted butter (use coconut oil for vegan version)
  • 3 tablespoon Olive oil
  • ¼ teaspoon Salt to taste

Instructions

Step I

  • Preheat the oven to 425 degrees F.
  • Prep the sweet potatoes by roughly peeling off the skin. Chop them into bite-sized cubes.

  • In a large bowl, add sweet potatoes, cubed onion, garlic, jalapeno, rosemary, butter, olive oil, and salt, and toss till combined.
    1 Red onion, diced, 1 bulb Garlic, crushed and peeled, 1 Jalapeno or Serrano, chopped, 1 tablespoon Rosemary, fresh & chopped, 3 tablespoon Melted butter, 3 tablespoon Olive oil, ¼ teaspoon Salt to taste

Step II

  • Spread this evenly in a single layer on a baking pan. Bake it in the preheated oven for 25 minutes. 
  • Broil on high for a minute or two or until golden brown. 
  • Roasted Sweet Potatoes are now ready. You can garnish with parsley and fresh rosemary and serve.

  • Baking time may vary depending on the size of the potatoes.
