Easy Easter Bunny Cake | Rabbit Cake
Make the super cute bunny cake for easter or a birthday party using a boxed cake mix and surprise your little ones. Decorate the top with easy homemade frosting, shredded coconut that adds rabbit fur-like texture, and jelly beans that add beautiful color to eyes and nose.

- 1 box Cake Mix of your choice (Carrot Cake, Vanilla Cake, yellow Cake, Almond Cake or chocolate Cake)
- Water, Eggs, and Vegetable oil, as mentioned in the cake box mix
- 1 cup Coconut Sweetened and Shredded
- Jelly Beans
- Construction paper
For Vanilla Whipped Cream Frosting (you can use store-bought ones too)
- 1 Pint Heavy whipping cream
- ½ cup Sugar
- 2 tablespoon Confectioners sugar
- 1 teaspoon Vanilla Extract
For decoration (optional)
- Non edible Easter grass or 1 cup Shredded and sweetened coconut with 3 drops of green color
Bake the cake
To make the bunny a little bigger, I have baked one single cake in a 10-inch round pan using one box of Betty Crocker Super Moist Vanilla Cake Mix. (Feel free to use your family's favorite flavor)

Bake the cake using the box mix and the ingredients of water, vegetable oil, and eggs called for in the box mix. Let the cake cool down completely. For baking temperature and time, follow the instructions given on the cake mix. Let the cake cool down completely.

Prepare Whipped Cream Frosting or use Store-bought
In a large bowl, pour chilled heavy cream and whisk till it just starts to thicken.
1 Pint Heavy whipping cream
Add sugar, confectioners sugar, and vanilla extract and continue to whisk till it becomes smooth and you get stiff peaks (i.e., when the whisk is raised the cream should stand up straight). Keep this in the refrigerator till you are ready to use.

How do you make an easter bunny cake (edible rabbit)?
Now cut the cake in half and put the halves together using the frosting to form the bunny's body.
Place the cake with a cut edge on a cake tray or serving plate.
Cut out a notch about ⅓ way up on one end of the body to form the head of the bunny. Attach the cutout piece to the other end using a toothpick to create the bunny's tail.

Draw bunny ears using pencil on a pink construction paper (start with a rectangle of approx 4 inch x 1 ¾ inch) for each ear and cut to shape using scissors. Fold the cut shape as shown in the figure.

Place these ears in the notch, and press lightly so that it penetrates the frosting applied in the notch.
Decoration (optional)
Now to surround the bunny with grass. You can either use non-edible easter grass or mix 1 cup coconut with 3 drops of green color and surround it around the bunny and you are done.

You can add extra jelly beans over the 'grass' to denote colored ‘easter eggs’. Just before you are ready to serve remove toothpicks, easter grass and construction paper.
