Asian Stir Fried Asparagus

Ingredients

  • 12 spears Asparagus
  • 1 medium Onion
  • 1 Green Chilie
  • 1.5 tablespoon Ginger grated
  • 5 cloves Garlic finely chopped
  • 1 tablespoon Soy Sauce
  • 2 teaspoon Worcestershire sauce (use Vegan version if preferred)
  • 3 tablespoon Tomato ketchup
  • 2 tablespoon Sriracha or any chili sauce
  • ½ teaspoon Vinegar
  • ½ teaspoon Cayenne
  • 1 teaspoon Red pepper flakes
  • ¼ teaspoon Cornstarch
  • 2 tablespoon Water
  • ¼ teaspoon Salt to taste
  • 1.5 tablespoon Oil

Instructions

Step 1

  • Wash and chop the asparagus spears into thirds.

  • Heat oil in a non-stick pan. Add onion, green chilies, ginger, garlic cloves and saute till it becomes translucent. Add salt while sauteing, as this helps onions to cook faster.

Step 2

  • Add the asparagus and saute it for 2 to 3 minutes.
  • Now add the soy sauce, Worcestershire sauce, tomato ketchup, sriracha chili sauce, vinegar, cayenne powder, red pepper flakes and saute for another 1 minute.

Step 3

  • Dissolve cornstarch in water and add it to the dish. Continue to saute for another 2 minutes or until the sauce thickens. Adjust salt to taste.

  • Spicy Asian Stir Fried Asparagus is now ready. Serve hot and enjoy.

Notes

  • Choose fresh asparagus - Look for asparagus that are bright green in color, firm, and whose tips are tightly closed.
  • Prep the asparagus correctly for stir-frying - Trim off the woody ends, and cut each spear into smaller bite-sized pieces. For even cooking, it is essential they have the similar thickness, else you can slice or peel the thick portions.
  • Don't overcook - Asparagus cooks quickly. We want it to be tender, crisp, and not mushy.
  • Preheat the pan/wok - Make sure the pan is well heated before adding asparagus, helping it to cook quickly and evenly.
