Ingredients

  • ¾ cup Rolled Oats
  • ¾ cup All purpose flour
  • 1 teaspoon Baking Powder
  • ¾ cup Coconut shredded
  • ¼ cup Brown sugar
  • ½ teaspoon Salt
  • ½ cup Butter room temperature
  • 1 cup Blackberries diced
  • 1 teaspoon Cornstarch
  • ½ tablespoon Lemon juice
  • 1 tablespoon Sugar

Instructions

Step 1

  • Preheat the oven to 375 degrees F.
  • Line 8-inch by 8-inch baking pan with parchment paper that hangs over two sides like handles. This will help in removing the baked bars from the pan with very little effort.

Step 2

  • In a bowl, combine oats, flour, baking powder, coconut, brown sugar, salt.
    ¾ cup Rolled Oats, ¾ cup All purpose flour, ¾ cup Coconut, ¼ cup Brown sugar, ½ teaspoon Salt, 1 teaspoon Baking Powder
  • To this add butter and mix till the dry ingredients are evenly moistened and forms a crumbly mixture.
    ½ cup Butter
  • Reserve ½ cup of this crumbly mixture and press the remaining mixture onto the baking pan using the back of a spoon or spatula and spread it evenly.
  • Scatter the blackberries over the crust. Sprinkle cornstarch, lemon juice and sugar on top of these berries.
    1 cup Blackberries, 1 teaspoon Cornstarch, ½ tablespoon Lemon juice, 1 tablespoon Sugar
  • Sprinkle reserved crumble mixture on top of this and lightly press.

Step 3

  • Bake these bars for 35 to 40 minutes or till the top becomes toasted and develops a golden color.
  • Let this cool completely. Cut them into squares.
