Jackfruit Pulled Pork
- 3 cups Young green jackfruit if using canned ones, jackfruit in water is most preferred, if not use the one in brine but not syrup)
- 2 tablespoon Coconut oil or any preferred cooking oil
- 1 Onion, finely chopped
- 4 Garlic cloves, finely chopped
- 2 to 3 tablespoon Cashews
- ¾ cup BBQ sauce
- ½ teaspoon Red chile powder
- Salt, to taste
Pressure cook the fresh young green jackfruit in water (covering at least ½ inch above the jackfruit) and salt for 2 whistles. If you use canned ones - rinse, drain, and dry the jackfruit in a bowl.

Separate the chunks of cooked jackfruit into shredded pieces if possible using a fork or your fingers.
Heat oil in a large pan or skillet on medium flame. Add onions, garlic cloves, and cashews and sauté till onion becomes translucent and garlic becomes fragrant.

Pour ¾ cup of BBQ sauce, very little water to thin down the sauce, red chile powder, salt to taste, and stir. Cover and cook on medium-low flame for 15 minutes or till the desired texture is reached. The longer you cook, the more tender it will be.

Once the jackfruit is simmered, I took around 12 minutes (as I have already pressure cooked it once), then cook on medium-high heat for 2 to 3 minutes. This will give a nice texture and color.
