Expert Tips
- Remove the outer portion and cut the stem of lemon grass and find the tender part. Finely chop the tender part and use it in the recipe.
- Vary the amount of green chilies as per your taste.
- You can serve this alone or along with any Thai entrees of your choice.
- To prevent mushy rice, use rice to water ratio of 1 cup: 1.5 cups while cooking. Optional step - Once the rice is cooked, spread it on a large plate and let it cook completely. This will help stop cooking, and evaporate excess moisture. Leftover rice works perfectly for this recipe.
