Homemade Strawberry Popsicles

Strawberry Popsicles are a classic and refreshing homemade frozen treat made using three ingredients only —the perfect recipe to try on hot summer days.

Ingredients

  • 16 oz Strawberries (1 lb)
  • 3 tablespoon + 1 tablespoon Sugar
  • 2 tablespoon Lemon juice

Instructions

  • Remove the stem and wash the strawberries.
  • Slice around eight strawberries into small chunks to fit into your mold, and place them in a separate bowl. Sprinkle 1 tablespoon of sugar on these strawberry chunks, toss, and keep it aside for 15 minutes to release the juices from the fruit.
  • Add the remaining strawberries, 3 tablespoon of sugar, and lemon juice with very little water to a blender to blend until smooth. (Check the taste and adjust the lemon juice and sugar. You can also add a pinch of salt if needed). You can roughly chop the strawberries before adding them to the blender to ease the blending process.
  • Add sweetened strawberry chunks into each popsicle mold, then pour in the puree. Leave a little place on the top of your popsicle mold. Insert the wooden sticks. Place the popsicle molds in the freezer for at least 4 hours or overnight.
  • To unmold, run the bottom of the popsicle mold under warm water for 5 seconds and pull out the popsicles.

Notes

  • Taste the strawberry puree before adding to the mold. The amount of sugar and lemon juice you may need may vary depending on the sweetness of your fruit. They should be slightly sweeter before they go into the freezer because once frozen, it tends to cut into the sweetness and also flavor.
  • To make strawberry yogurt popsicles or creamy, add yogurt or coconut milk while blending.
  • You can also make these popsicles with fruits like mango, kiwi, other summer berries, or peaches.
  • Add mint leaves while blending if desired for strawberry mint popsicle. 

Storage

Popsicles can be stored in the mold or unmolded, wrapped in a nonstick material like parchment paper, plastic wrap, or wax paper, and stored in a freezer bag or container. Homemade popsicles will last in the freezer for up to two months.
