Wash the kale and remove the tough stem. Chop or tear them into bite-size pieces.
4 to 6 Kale leaves
Add kale, chickpeas, cabbage, cucumber, tomatoes, onion, green onion, and coriander leaves in one bowl.
1 can Chickpeas or Garbanzo, ¾ cup Red cabbage, finely shredded, ½ cup Cucumber, chopped, 2 Tomatoes, chopped, ¼ cup Red onion, thinly sliced, 2 Green onions, finely chopped, 2 tablespoon Parsley or Cilantro
Whisk minced garlic, lemon juice, vinegar, olive oil, salt, black pepper, and pepper flakes in a small bowl. (adjust all the ingredients to your liking)
1 Garlic, minced, 1 tablespoon Balsamic vinegar, 1 tablespoon Lemon juice, 2 tablespoon Olive oil, ½ teaspoon Salt, ½ teaspoon Black pepper powder, ½ teaspoon Red pepper flakes
Pour this over the kale and chickpea salad mixture and toss until everything is combined.
Let this sit for 10 to 15 minutes.
Just before serving, toss it with croutons.
