Equipment

Ingredients

  • 2 cups All purpose flour or wheat flour or use a 1:1 ratio
  • 3 Garlic cloves or Garlic powder 1 tsp
  • 1 teaspoon Salt
  • 1 teaspoon Baking powder
  • ¼ cup Yogurt curd or Dairy-free yogurt
  • 2 tablespoon Butter or oil or ghee
  • Warm water as needed approximately ½ to ¾ cup
  • Oil for cooking bread optional

Instructions

How to make flatbread dough?

  • Add flour, garlic cloves, salt, baking powder, yogurt, and butter and mix.
2 cups All purpose flour, 3 Garlic cloves, 1 teaspoon Salt, 1 teaspoon Baking powder, ¼ cup Yogurt, 2 tablespoon Butter or oil or ghee
  • Now add water little by little and knead to form a smooth and medium soft dough.
    Warm water as needed
  • Cover and rest the dough for 20 to 30 minutes.

Roll the dough

  • After the dough has rested, divide it into ten equal portions and shape them into lemon-sized balls.
  • On a well-floured working surface, using a rolling pin, flatten each ball of dough into a 6 - 8 inch diameter circle.

How to cook the skillet bread (roti)?

  • Heat a non-stick pan or cast-iron skillet on medium-high heat.
  • Cook each flatbread till you see some golden spots, approximately 1-2 minutes on each side. You may apply oil or butter when cooking if needed.
    Oil for cooking bread
  • Transfer it to the plate and cover it with a kitchen towel to keep it warm and soft.
  • Repeat for remaining flatbreads.
  • Serve with any gravy or curry of your choice and enjoy.

Notes

  • Yogurt makes your bread soft. If you do not like it, skip it.
  • Always cook the bread on a medium-high flame, and when done, transfer it to the plate and cover it with a warm towel. This ensures that the bread remains soft for a longer time.
  • Add herbs like parsley, cilantro, mint, basil, dill or rosemary to enhance the flavor.
  • Fresh garlic can be substituted with garlic powder.
  • Instead of butter, garlic butter or garlic oil can also be used to make the bread dough.
  • You can make this bread only with regular flour or whole wheat flour or combine the two with a 1:1 ratio. The flavor and texture in all 3 cases will be different but good.
