Preheat the oven to 350 degrees F (180 degrees C). Line the baking pan with parchment paper. You can use an 11* 11 or 13 * 9-inch baking pan.
Prepare fruits: Add chopped apples, persimmons, and lemon juice to a bowl and toss well until combined. Set this aside.

Cinnamon swirl: Add melted butter, brown sugar, and cinnamon powder and mix well in another bowl. Keep this aside.

Cake batter: Add eggs, sugar, vanilla extract, and oil in a mixing bowl and whisk for 3 minutes until light and airy.

Add flour, salt, and baking powder and gently stir to mix dry and wet ingredients. Whisk, but do not overmix. Scrape the sides of the bowl using a spatula. Add the fruits and mix well.

Transfer the batter to the prepared baking pan. Spread evenly.
Add the cinnamon brown sugar mixture and swirl it in the cake batter using a spoon or fork.
Bake for 40 to 45 minutes or until a toothpick inserted comes out clean. Let the cake cool for 10 minutes.
Simple glaze: In a bowl, mix powdered sugar with milk and whisk until combined. Pour the mixture over the cake while still warm.

Cut the cake into the desired shape and size. Serve and enjoy.
