Ingredients

  • 2 Apples chopped
  • 2 Persimmons chopped
  • 1 tablespoon Lemon juice

For the cinnamon swirl

  • 3 tablespoon Melted butter
  • ½ cup Brown sugar
  • 1 teaspoon Cinnamon powder

For the cake batter

  • 3 Eggs
  • ½ cup Sugar
  • 2 teaspoon vanilla extract
  • ½ cup Oil
  • 1 ½ cups Flour
  • ½ teaspoon Salt
  • 1 teaspoon Baking powder

For the glaze

  • 1/ cup Powdered sugar
  • 1 to 2 tablespoon Milk

Instructions

  • Preheat the oven to 350 degrees F (180 degrees C). Line the baking pan with parchment paper. You can use an 11* 11 or 13 * 9-inch baking pan.
  • Prepare fruits: Add chopped apples, persimmons, and lemon juice to a bowl and toss well until combined. Set this aside.

  • Cinnamon swirl: Add melted butter, brown sugar, and cinnamon powder and mix well in another bowl. Keep this aside.
    3 tablespoon Melted butter, ½ cup Brown sugar, 1 teaspoon Cinnamon powder
  • Cake batter: Add eggs, sugar, vanilla extract, and oil in a mixing bowl and whisk for 3 minutes until light and airy.

  • Add flour, salt, and baking powder and gently stir to mix dry and wet ingredients. Whisk, but do not overmix. Scrape the sides of the bowl using a spatula. Add the fruits and mix well.

  • Transfer the batter to the prepared baking pan. Spread evenly.
  • Add the cinnamon brown sugar mixture and swirl it in the cake batter using a spoon or fork.
  • Bake for 40 to 45 minutes or until a toothpick inserted comes out clean. Let the cake cool for 10 minutes.
  • Simple glaze: In a bowl, mix powdered sugar with milk and whisk until combined. Pour the mixture over the cake while still warm.

  • Cut the cake into the desired shape and size. Serve and enjoy.

  • Instead of plain glaze, you can even top it with cream cheese frosting.
