For dragon fruit cake
- ½ cup Butter melted
- 1 ½ cups Sugar
- 4 Eggs
- 1 tablespoon Vanilla extract
- ¾ teaspoon Salt
- 3 cups All purpose flour
- 1 tablespoon Baking powder
- ¾ cup Dragon fruit puree
For decorating cake
- 300 ml Heavy whipping cream approx 1 ½ cups
- 2 tablespoon Confectioner's sugar or regular sugar
- 1 teaspoon Vanilla extract
- 2 tablespoon Dragon fruit puree.
Making of dragon fruit cake
Preheat the oven to 350 degrees F (180 degrees C).
Grease 2 8 or 9-inch cake pans or line them with parchment paper and keep it ready.
In a mixing bowl, add butter, sugar, eggs, and vanilla extract and whisk until light and airy.
To this, add salt, flour, baking powder, and dragon fruit puree and whisk until combined. Scrape the sides of the bowl.
Pour the batter into the prepared baking pan and tap to remove any air pockets.
Bake for 30 to 35 minutes or until toothpick or knife inserted comes out clean.
Let the cake cool completely. You can slice and serve the cake as it is.
Decorating the cake
Slice the cake to trim doomed tops and make it flat.
To a mixing bowl, add whipping cream, sugar, and vanilla extract and whisk until stiff peaks are formed.
Place one layer of cake on a serving plate, spread the whipped cream on top, and place another layer of cake. Apply a thin layer of whipped cream (crumb coating).
Add dragon fruit puree to the remaining whipped cream and whisk to create a vibrant pink frosting.
Decorate the cake as desired and enjoy.
- You can even add more dragon fruit puree initially while making the frosting to make it all pink, even in the layers.
- Any leftovers can be kept in a refrigerator for 2 to 3 days.
- You can add a drop of pink coloring if required for richer color.
- You can even combine dragon fruit with strawberries.
