- ½ cup Chia seeds Basil seeds or Sabja seeds
- 1 ½ cups Milk dairy-free for a vegan version
- 1 to 2 tablespoon Sweetener honey, sugar, or maple syrup
- 2 Dragon fruit pitaya, cut into slices
Add chia (basil seeds), milk, and sweetener in a bowl and whisk. Let it sit for at least 15 minutes in the refrigerator. Stir again after 15 minutes to break any clumps.
½ cup Chia seeds, 1 ½ cups Milk, 1 to 2 tablespoon Sweetener
Basil seeds will bloom and thicken within 15 minutes, while chia seeds may take a little longer, 30 minutes to 1 hour. For a thicker consistency, soak it a little longer. You can also make this and chill it overnight.
Add the dragon fruit cubes to a mixer jar or blender and blend them to form a puree. Refrigerate this.
2 Dragon fruit
Layer chia seed pudding and dragon fruit puree. (Layering is done to look prettier. You can mix dragon fruit puree with milk and chia seed mixture and let it sit. After the first 15-30 minutes, stir to break up any clumps.)
Stir and serve chilled. Garnish with your favorite fruits, seeds, and nuts. Mix and enjoy. This can be stored in a refrigerator for two days.
- Once everything is mixed, you can serve it within 30 minutes, but chia seeds may be crunchier. So wait for atleast 1 hour. But if basil seed is used, it will be ready in 15 minutes.
- I have tried using chia and basil seeds (sabja seeds). It works well for both.
- Toppings are optional. Add your favorite nuts, granola, coconut, and fruits.
- Along with dragon fruit, you can even add mangoes and strawberries.
- If you feel the pudding has become too thick, add more milk.
