For the dragon fruit cupcakes
- ¼ cup Oil
- 1 Egg
- ⅓ cup Sugar
- ½ teaspoon Baking powder
- ¼ teaspoon Salt
- ½ cup Milk
- 1 teaspoon Vanilla extract
- ½ cup Dragon fruit puree
- 1 cup Flour
For the dragon fruit buttercream frosting
- ¼ cup Butter softened
- ¾ cup Confectioners sugar
- 1 teaspoon Vanilla extract
- 1 to 2 tablespoon Milk adjust as needed
- 2 tablespoon Dragon fruit puree
Making of dragon fruit cupcakes
In a mixing bowl, add oil, egg, sugar, baking powder, salt, and milk and whisk this for atleast 2 mins or until pale yellow in color. Add vanilla extract and whisk for a minute.

Add dragon fruit puree and flour and whisk for a minute. Scrape the sides of the bowl.

Pour the batter into cupcake molds.
Bake in a preheated 350-degree F (180-degree C) oven for 15 to 20 minutes.
Let the cupcakes cool for 5 minutes. Transfer them to a wire rack to cool completely.
For the buttercream frosting
Add the butter, whisk, and cream in a mixing bowl for 2 minutes.

To this, add confectioner sugar and whisk until well combined.

Next, add vanilla extract and milk. Scarpe the sides of the bowl and mix.

Add the dragon fruit puree and whisk until combined. If you want it to firm up slightly, refrigerate it for 5 to 15 minutes.

Transfer to a piping bag and decorate the cupcakes as needed with your favorite tip. If necessary, top with a slice of dragon fruit.
