Preheat the oven to 350 degrees F or 180 degrees C.
Grease an eight- or 9-inch baking pan, line it with parchment paper, and keep it aside.
Cream butter and sugar in a bowl for 2 to 3 minutes.
½ cup Butter, ⅔ cup Sugar
Add eggs and vanilla extract and whisk until light and creamy for 2 to 3 minutes.

Add flour and baking powder and whisk until combined. Do not overmix.

Scrape the sides using a spatula.
In a bowl, add apples and lemon juice and toss until combined.

Add this to the batter and mix well using a spatula.
Transfer the batter to the prepared baking pan. Spread the batter evenly and level off the top. Sprinkle sugar on top.

Bake for 40 minutes or until a toothpick inserted comes out clean.
Let this cool on a wire rack for 15 to 20 minutes.
Sprinkle powdered sugar if desired.
