Ingredients

  • ½ cup Butter melted
  • ½ cup Molasses Jaggery syrup, check tips
  • 1 ½ cups banana mashed
  • 2 Eggs
  • 1 teaspoon Vanilla extract
  • 2 cups Flour
  • 1 tablespoon Cinnamon powder
  • 1 tablespoon Ginger ground
  • ¾ teaspoon Allspice
  • ½ teaspoon Salt
  • 1 tablespoon Baking powder
  • ½ cup Raisins

Instructions

  • Preheat the oven to 350 degrees F. Line the loaf pan with parchment paper and keep it aside.
  • In a mixing bowl, whisk together butter, molasses, banana, eggs, and vanilla extract until well combined.
    ½ cup Butter, ½ cup Molasses, 1 ½ cups banana, 2 Eggs, 1 teaspoon Vanilla extract
  • To this add flour, cinnamon, dry ginger, allspice, salt, baking powder, raisins, and mix until combined.
    2 cups Flour, 1 tablespoon Cinnamon powder, 1 tablespoon Ginger, ¾ teaspoon Allspice, ½ teaspoon Salt, 1 tablespoon Baking powder, ½ cup Raisins
  • Transfer the batter to the prepared loaf pan.
  • Bake for 55 minutes or until a toothpick inserted comes out clean.

Notes

  • This bread is mildly sweet. If you want it sweeter, add another ¼ cup of molasses, honey, or sugar.
  • Any leftover can be stored in the refrigerator for 2 to 3 days or in the freezer for up to 1 month.
  • Use ripe bananas for the best results.
  • For more texture, you can add toasted walnuts or chocolate chips.
  • If the top browns too quickly, cover it with foil and continue baking.
  • Allspice or a combination of nutmeg and cloves for a signature festive flavor.
