Laayi Pitta Undo | Traditional Janmashtami & Ganesh Chaturthi Laddu
Laayi Pitta Undo (Puffed Paddy Ladoo or Aralu Laddu) is a simple and traditional Laddu recipe prepared in coastal regions during the Janmashtami and Ganesh Chaturthi festivals. This Indian sweet is made with jaggery, puffed paddy powder, boondi, cashews, and ghee.

- 1 ½ to 2 cups Chikki jaggery sticky jaggery, or anta goda (approx 400 - 500 g)
- ¾ cup Water
Adjust all ingredients per liking
- 1 to 2 cups Boondi adjust as needed. Check tips, optional
- ¼ cup Cashews roasted
- ¼ cup Thick sev or karo optional
- 1 tablespoon Til sesame seeds roasted
- 2 cup Puffed Paddy coarse or laayi pitto, more if needed
- ¼ cup Ghee
- ½ teaspoon Cardamom powder
Add jaggery and water to a pan on a medium flame. Simmer for 8 to 10 minutes or until it reaches the soft ball stage.
1 ½ to 2 cups Chikki jaggery, ¾ cup Water
Add boondi, cashews, sev, sesame seeds, ghee, cardamom powder, and laayi (aralu) in increments and mix. Let this sit for 5 to 10 minutes.
1 to 2 cups Boondi, ¼ cup Cashews, ¼ cup Thick sev or karo, 1 tablespoon Til, 2 cup Puffed Paddy, ¼ cup Ghee, ½ teaspoon Cardamom powder
Pinch a small portion of the warm mixture and shape it into a laddus of the desired size.
This can be stored for 20 to 30 days in an airtight container.
- Boondi and thick sev (karo) are totally optional. It adds a nice crunchy texture to your ladoos. If you skip that, you must add more laayi (puffed paddy powder).
- Roasted peanuts can be used instead of cashews.
- To make this ladoo, only sticky jaggery is used (antu bella, anta goda). Other jaggery will not work. Sticky jaggery makes it easier to bind the ladoo and hold its shape.
- Once the jaggery syrup is done, add and adjust all ingredients to your liking. More boondi or laayi powder or cashews or peanuts is your choice.
