For the cranberry orange bread
- ⅔ cup Cranberries dried
- ½ cup Butter softened
- ⅔ cup Sugar
- 2 Eggs
- 1 ½ tablespoon Orange zest
- ½ cup Orange juice freshly squeezed
- 1 ½ cups All-purpose flour 1 tablespoon Flour
- 1 teaspoon Baking powder
For the orange glaze
- ½ cup Powdered sugar
- 1 tablespoon Orange zest
- 1 to 2 tablespoon Orange juice
For the cranberry orange bread
Preheat the oven to 350 degrees F. Prepare the baking pan and keep it aside.
Soak dried cranberries in hot water for 10 minutes.
⅔ cup Cranberries
In a mixing bowl, cream together butter and sugar.
½ cup Butter, ⅔ cup Sugar
Add eggs, orange zest, and orange juice, and whisk well.
2 Eggs, 1 ½ tablespoon Orange zest, ½ cup Orange juice
Add flour and baking powder, and mix until combined. Scrape the sides of the bowl.
1 ½ cups All-purpose flour, 1 teaspoon Baking powder
Drain the cranberries and toss them with 1 tablespoon flour.
Fold them into the batter.
Transfer the batter to the prepared bread loaf pan.
Bake for 45 to 55 minutes or until a toothpick inserted comes out clean.
Let it sit for 10 minutes.
Transfer it to a wire rack. Let it cool completely.
For the orange glaze
In a bowl, mix well the powdered sugar, orange zest, and orange juice.
½ cup Powdered sugar, 1 tablespoon Orange zest, 1 to 2 tablespoon Orange juice
Drizzle on top of the cake.

- Do not overmix the batter.
- Zest the fresh oranges before taking out the juice.
- To prevent the cranberries from sinking, toss them in flour before folding in the batter.

- You can even bake the muffins instead of the same batter for about 18 to 22 minutes.
