Equipment

  • Mason jars
  • Handheld mixer

Ingredients

For the Crust

  • 15 Biscuits (Marie or Parle G ) or 8 Graham crackers – use your favorite
  • 2 tablespoon Butter or Ghee, melted

For the Cheesecake Layer

  • ¾ cup Heavy cream or whipping cream
  • 8 oz Cream cheese, softened to room temperature ( 1 block)
  • ½ cup Powdered sugar or icing sugar or confectioner’s sugar
  • 2 tablespoon Sour cream or Yogurt
  • 1 teaspoon Vanilla extract (optional)

Instructions

  • Have your jars ready to go. Four, or 6, or 8 depending on the size of the jars. If you are serving it for a birthday or Diwali party for a larger crowd and just want your guests to be introduced to fusion desserts, then you can also serve it in shot glasses. If you are not able to find any of the above simply serve in a dessert cup or bowl.

Step I (Prepare the Crust)

  • Pulse the biscuits into fine crumbs in your mixer or food processor. To this add 2 tablespoon of melted butter and mix well. The mixture will resemble wet sand.
15 Biscuits (Marie or Parle G ) or 8 Graham crackers – use your favorite, 2 tablespoon Butter or Ghee, melted
  • Spoon a generous amount, say 2 tbsp, of this mixture into each jar, and using the back of a spoon press it gently. Keep this aside.

Step II (Prepare Cheesecake Filling)

  • Using a stand mixer with a whisk attachment or using a hand mixer, whip the cold cream on medium-high speed for 3-4 minutes till stiff peaks are formed. Keep this aside or in the refrigerator till you are ready to use.
¾ cup Heavy cream or whipping cream
  • In a small bowl crumble or cut the mango burfis or carrot burfi into small chunks. Keep this aside.
8  Mango burfi, Carrot Burfi or any burfi of your choice (homemade or store-bought). Check tips for substitutes.
  • In another bowl, using the same hand mixer or stand mixer, beat cream cheese, sugar, yogurt, and vanilla extract on high speed until smooth and creamy.
8 oz Cream cheese, softened to room temperature ( 1 block), ½ cup Powdered sugar or icing sugar or confectioner’s sugar, 2 tablespoon Sour cream or Yogurt, 1 teaspoon Vanilla extract (optional)
  • Start folding whipped cream into this cream cheese mixture in parts until all combined. You may have to fold it a couple of times. Make sure you do it slowly so that the whipped cream doesn’t deflate.
  • Using a piping bag or spoon, add the cheesecake mixture on top of the crust – halfway through the jar. Add some burfi chunks. Top with another layer of cheesecake filling and finally top it with a burfi slice and garnish of your choice.
  • Burfi Cheesecake Jars are ready. Serve and Enjoy.

Notes
