Vegetarian Shahi Korma is simple and delicious dish where vegetables are cooked in spiced sauce in slow flame. This sauce is mainly made with yogurt, garlic, ginger, black peppercorns and different spices. I watch lot of food and travel shows which inspires me to cook different recipes.
Shahi means 'Royal'. From history, it appears that korma was prepared in royal kitchen with mutton or lamb. So non-vegetarian lovers, add your favorite meat and follow the recipe 🙂 This is one of the best and the tasty recipe that I have ever tried.

Preparation time : 40 minutes
Serves : 3
Ingredients for Vegetarian Shahi Korma
Yogurt - 1 cup
Cumin seeds - 1 tsp
Coriander powder - 1 to 1 ½ tsp
Red chilli Powder - 1 to 1 ½ tsp
Cardamom seeds - 5
Cloves - 3
Garam Masala powder - 1 to 1 ½ tsp
Water - 1 ½ cup
Oil - 1 tbsp
Butter/Ghee - 2 tbsp
Salt to taste
Garlic cloves - 8
Ginger - 1 inch
Black peppercorns - 10
Coriander leaves - 5 strands
Vegetables/Meat of your choice. I have used
Carrot chopped - 2
Capsicum chopped - 1
Mushroom chopped - 4 oz
Potatoes chopped - 3
Frozen green peas - ¼ cup
Steps to prepare Vegetarian Shahi Korma
- Grind ginger, garlic cloves and peppercorns adding little water to form smooth paste.
- Heat oil and butter in pan. add cumin seeds, cloves, cardamom and saute for 30 seconds.
- Add potatoes, mushroom, carrot , ground paste, and all the other ingredients mentioned above in the list and bring it to nice boil. cover with lid, reduce the heat to low and simmer for 20 to 30 minutes.
- Add the capsicum , coriander leaves and frozen green peas in last 10 minutes of cooking.
- Vegetarian Shahi Korma is now ready. Serve hot with rice and enjoy.
Tip:
- For Non-vegetarian recipe, simmer for at least 45 minutes till meat is very tender.
- Add water if necessary to avoid it dish from drying out.
- You can use the readily available ginger garlic paste. But I always love when its fresh.
