    What is marinated tofu?

    Marinated tofu is extra-firm tofu soaked in a flavorful mixture of soy sauce, vinegar, honey, ginger, and garlic before cooking. The marinade infuses tofu with bold flavor while creating an addictive caramelized crust during cooking.

    Unlike plain tofu, marinated tofu absorbs sweet, savory, tangy, and umami flavors, making it one of the best plant-based proteins for everyday meals.

    Ingredients

    For the marinade

    Soy sauce: Dark or light; both work.

    Vinegar: Apple cider or rice vinegar.

    Honey: for sweetness. Can use maple syrup or brown sugar instead.

    Oil: any neutral oil, your favorite cooking oil, or sesame oil or olive oil.

    Ginger and garlic: homemade paste or minced garlic and ginger.

    Red chile powder: for heat. You can even use green chilies or pepper powder instead.

    Tofu Marinade

    How to marinate tofu?
    • Cut the pressed tofu into cubes or slices, then transfer it to a shallow dish or a baking dish.
    • In another small bowl, whisk together soy sauce, vinegar, honey, ginger-garlic paste, oil, and red chile powder.
    Marinate tofu and rest atleast 30 minutes.
    • Pour the marinade over the tofu and gently coat every piece. Cover and refrigerate for 30 minutes. For maximum flavor, you can marinate for 8 hours or overnight.

    Pan-fried marinated tofu

    • Heat the oil in a skillet over medium to medium-high heat. Place the marinated tofu pieces in the pan and fry until golden brown on both sides.
    • Pour any leftover marinade and stir to coat. Best served with steamed rice.

    Baked marinated tofu

    • Preheat the oven to 350 degrees F. Place the tofu cubes on a baking sheet lined with parchment paper. Bake for 18 to 20 minutes, then flip and bake for another 15 minutes, or until golden brown and crisp.
    • If you have extra marinade, immediately fry the baked tofu in leftover marinade in a skillet for 2 minutes.

    Air fryer marinated tofu

    • Place the tofu pieces in a single layer in the air fryer basket and air fry at 400 degrees F for 12 to 15 minutes, shaking the basket after 8 minutes.
    • For extra flavor, you can pour the leftover marinade over the pan-fried pieces and pan-fry for 2 minutes.

    Variations

    Add the mentioned ingredients to the marinade to make any of these flavors.

    Ginger-garlic tofu: Increase the amount of freshly minced ginger and garlic in the marinade.

    Spicy tofu: add sriracha sauce, Thai green chilies, or crushed red pepper.

    Teriyaki tofu: add brown sugar instead of honey and teriyaki sauce.

    Lemon herb tofu: use fresh lemon juice, thyme, herb, oregano, and minced garlic.

    BBQ tofu: instead of soy sauce, add your favorite BBQ sauce

    Indian tofu: add tandoori masala or garam masala powder.

    Store and Freeze

    • Leftover or uncooked marinated tofu can be stored in an airtight container in the refrigerator for 4 days, making it perfect for meal-prep.
    • You can also put the marinated tofu cubes in a Ziploc bag and freeze them for up to 6 months. Thaw them in the fridge overnight.

    Marinated tofu tastes great in salad bowls, sandwiches, cooked quinoa, steamed rice, fried rice, noodle bowls, buddha bowls, stir-fries, and roasted vegetables.

    How to press tofu properly?

    Place a cutting board or skillet on top of the tofu block to help remove excess moisture, absorb the marinade, and make it crispy during cooking.

    What is the best way to marinate tofu?

    To marinate the tofu, press the block and cut it into pieces. Soak it in flavorful sauce for atleast 30 minutes. Marinate overnight for maximum flavor.

    How long can you marinate tofu?

    The longer you marinate, the better it will taste. You can marinate it from 30 minutes to overnight. For meal prep, you can marinate and refrigerate it for 2 days.

    How to stop tofu from sticking to the pan?

    Always grease the cast-iron skillet with oil or use a good non-stick pan. This will help the bottom get a nice, crispy texture, prevent it from sticking, and make it easy to flip.

    Always use extra-firm or medium-firm tofu. It will absorb the flavor better. Silken or soft tofu will not work. It will fall apart and will not become crispy. 
    Marinate overnight for best flavor.
    Don't skip the pressing. It's the biggest factor in flavor absorption and texture. 
    Don't overcrowd the pan.
    The color of the marinated tofu varies based on the type of soy sauce used.
    For a deep flavor boost, toss the crispy tofu in leftover marinade and sauté for a minute.
