    Stir-fry with bean sprouts

Srir fry with bean sprouts is high in protein, low in calories and carbs, good for a vegan and gluten-free weight loss diet.

Mung bean is called pachai payaru in Tamil, Hesaru kaalu in Kannada, green gram in English, and moong in Konkani. Take a look at the picture of mung beans and other Indian dals.

You can check moong sprouts usal (usli) or moongachi bhaji, a no-onion-no-garlic version of moong curry made specially during Indian vrat, fasting, and upvas days.

    Ingredients

Mung bean sprouts: I have used homemade sprouted beans. Feel free to use store-bought, too.

Tempering: Oil, cumin seeds, onion, green chilies, and ginger garlic paste.

    Lemon juice: Brightens the flavor.

Check out the recipe card for the full list of ingredients.

    How to sprout mung beans?

    • Wash and soak green gram in enough water overnight or for approximately 8 hours. Drain and rinse it.
    • Add this to a wide pan and cover it. Please keep it in a dark place for a day. This will help the sprouts grow. Instead of a pan, you can even tie beans in a thin wet cloth to sprout.
