Mung Bean Sprouts Stir Fry is an easy-to-make, quick, and delicious, protein-packed recipe that is perfect for breakfast, lunch, or a light dinner.

Srir fry with bean sprouts is high in protein, low in calories and carbs, good for a vegan and gluten-free weight loss diet.
Mung bean is called pachai payaru in Tamil, Hesaru kaalu in Kannada, green gram in English, and moong in Konkani. Take a look at the picture of mung beans and other Indian dals.

Ingredients
Mung bean sprouts: I have used homemade sprouted beans. Feel free to use store-bought, too.
Tempering: Oil, cumin seeds, onion, green chilies, and ginger garlic paste.
Lemon juice: Brightens the flavor.

How to sprout mung beans?
- Wash and soak green gram in enough water overnight or for approximately 8 hours. Drain and rinse it.
- Add this to a wide pan and cover it. Please keep it in a dark place for a day. This will help the sprouts grow. Instead of a pan, you can even tie beans in a thin wet cloth to sprout.

Making of sprouts stir fry
- Heat oil in a pan. Add cumin seeds and saute for a few seconds.
- Add the onion and saute until it becomes translucent on medium flame.
- Now add green chilies and ginger garlic paste and saute for a minute.
- Add the sprouted mung beans, salt to taste, and 1 cup of water, and mix.
- Cover simmer for 20 minutes or until the desired texture is reached. Stir every 5 minutes.
- When all the water has evaporated, add lemon juice and mix well. Switch off the flame.
- Serve and enjoy.

Serving suggestions
- Serve this as it is for a light meal or as a side dish with roti, naan, chapati, or rice.
- You can use it as a filling for wraps and sandwiches.
Tips & Variations
- Based on the texture of sprouted beans you like, adjust water and cooking time. For a firm sprouted bean, cook for 10 minutes and use ½ cup of water.
- To make it more flavorful and nutritious, you can add green peas, carrots, beans, capsicum or bell peppers, and tomatoes as well.
- If you want a creamy texture for sprouted beans, then pressure cook for 1 whistle.
