How to make the best creamed peas?
In a pan on medium heat, melt butter. Add onions and saute just till it turns soft. Do not caramelize the onions.
4 tablespoon Butter, 1 medium Onion
Add green peas, and stock, and simmer for 3 minutes. Now add cream and continue to simmer until it bubbles and thickens, i.e., almost reduced by half. It takes about 3 to 5 minutes once the cream starts to simmer. Check the video for making creamed peas. ½ cup Vegetable Stock, 2 cups Green peas, ¾ cup Heavy cream
Add salt, spring onions, and stir for another 1 minute. Switch off the flame. Creamed Peas tastes best when served warm.
Salt, 2 tablespoon Spring onions
To serve creamed peas in a bread bowl
Check the video on how bread bowl is made. Cut the top of each bread. Scoop out the center. Do not discard these portions. You can use both top and center portions to dip in the creamed peas later. Watch this video for a better understanding. Artisan homemade bread bowl
Now add the creamed peas and top it with shredded mozzarella or other melting cheese of your choice. Broil in a preheated 500F oven until the cheese has melted and the top becomes golden brown.
Mozzarella cheese
- The mixture thickens as it cools down. So warm it before serving and if you find it too thick, thin it down with milk, cream, or water if desired.
- Since I made this, especially for my kids, I have not added pepper powder, red pepper flakes, or garlic powder. If you want some heat and a strong flavor profile, feel free to add them as per your taste.
- To make it even more flavorful, you can add crispy bacon bits, fried onions, potatoes, or mushrooms.
- You can even use canned peas in the recipe.
- Don't like spring onions? Skip and add some fresh herbs like basil or parsley if desired.
