Leftover Cake Truffles

Leftover Cake Truffles or Cake Balls are chewy and delicious no-bake bite-sized treats that make you feel like you are eating a cake in a whole bite.

Ingredients

  • 2 cups Leftover cake
  • 4 to 5 tablespoon Heavy whipping cream or Whole Milk or Coffee creamer
  • ¼ teaspoon Vanilla extract
  • ½ teaspoon Sugar (optional)
  • 1.5 cups Chocolate chips Semi-sweet or Milk or Dark or White Chocolate
  • 3 tablespoon Coconut toasted flakes
  • 3 tablespoon Cashews toasted

Instructions

Step I

  • In a bowl, crumble the leftover cake, add whipping cream, vanilla extract, and sugar to form the dough. This should not be too wet. So depending on how moist or dry your cake is, add the cream or milk little by little at a time. The dough should be such that it is easy to roll bite size balls out of it.
    2 cups Leftover cake, 4 to 5 tablespoon Heavy whipping cream, ¼ teaspoon Vanilla extract, ½ teaspoon Sugar
  • Make bite-size balls from these and place them on a baking sheet lined with parchment paper.
  • Place this in the freezer for 30 minutes or until it is firm. This will make dipping easier.

Step II

  • Melt the chocolate chips using the double boiler method or microwave.
    1.5 cups Chocolate chips
  • Remove a few cake balls at a time from the freezer, so they don't soften up. Roll them in this melted chocolate one at a time so that they get coated completely.
  • Sprinkle toasted cashews or toasted coconut immediately and place it in the freezer to set for another 30 minutes.
    3 tablespoon Coconut, 3 tablespoon Cashews
  • Leftover Cake Truffles are now ready. Serve and enjoy.

Notes

  • You can use any leftover sponge cake to make this recipe. Especially, after a party, if there is leftover cake, or there are trimmings from designed cakes, etc., don't let them go to waste. Make truffles using them and continue the celebration for few more days!
  • You can cover the cake truffles in any type of chocolate - sweet, semi-sweet, dark, white, or even candy melts!
  • Use sprinkles, crushed or sliced nuts, coconut flakes, etc., to decorate the truffles.
