Tutti Frutti Cake | Holiday Fruit Cake

Tutti Frutti Cake is a soft and moist, delicious bakery-style cake famous in India. Fruit cake is made with flour, milk, butter, and tutti frutti. This is nothing but candied fruit cake baked during holidays in Western countries.

Equipment

  • 2 Loaf pan or Cake Pan

Ingredients

  • 3 cups All purpose flour Maida
  • ½ teaspoon Salt
  • 2 teaspoon Baking powder
  • 1 teaspoon Baking soda
  • 1 ½ cups Sugar
  • ¾ cup Butter melted or oil or Vegetable shortening
  • 1 teaspoon Vanilla extract
  • 2 cups Milk room temperature (or dairy-free milk)
  • 1 tablespoon Orange juice
  • 1 ½ cups Tutti frutti candied fruit mix

Instructions

  • Preheat the oven to 350 degrees F. Grease the bread loaf pan or square cake pan with butter or line it with parchment paper and keep it aside. (I have used one regular loaf and one mini loaf pan to bake this cake)
  • In a large bowl, add dry ingredients: flour, salt, baking powder, baking soda, sugar, and mix.
    3 cups All purpose flour, ½ teaspoon Salt, 2 teaspoon Baking powder, 1 teaspoon Baking soda, 1 ½ cups Sugar
  • In another bowl, add butter, vanilla extract, milk, and orange juice and whisk until combined.
    ¾ cup Butter, 1 teaspoon Vanilla extract, 2 cups Milk, 1 tablespoon Orange juice
  • Make a well in the center of the dry ingredient, pour the wet ingredient, and mix just until combined.
  • Add tutti frutti and gently fold them into the batter.
    1 ½ cups Tutti frutti
  • Pour the batter into a well-greased pan and bake it for about 35 to 50 minutes or until done. Use a toothpick or a knife to check if the cake is done. The baking time may vary depending on the size of the cake. If the cake starts getting brown, cover the top with aluminum foil.
  • Allow the cake to cool for about 10 minutes. Then remove it from the pan and let it cool completely on a wire rack even before you slice.

Notes

  • Use almond milk, coconut milk, or soy milk to make a vegan version of this fruit cake. Else, use whole milk. 
  • I have baked this cake with shortening for the vegan version and butter for the regular eggless version. Both taste equally good. 
  • Cannot find tutti fruit? You can bake this cake with an equal amount of roasted dry fruits and nuts.
  • Also, add a pinch of nutmeg and cinnamon to make it a holiday-themed cake.
