Cheese Tortellini Marinara is a classic and easy-to-make recipe with cheese tortellini tossed in creamy marinara sauce. This pasta dish is ready in less than 20 minutes; serve this for a quick weeknight meal.

Ingredients

  • 9 oz Three cheese tortellini approx 225 g (fresh or refrigerated)
  • 1 tablespoon Olive oil
  • 1 tablespoon Butter
  • 1 Onion finely chopped
  • 3 to 5 Garlic cloves chopped
  • 4 oz Mushroom sliced
  • ¼ cup Frozen green peas
  • ¼ cup Frozen sweet corn
  • 1 cup Marinara sauce Tomato sauce
  • ¼ cup Alfredo sauce heavy cream
  • Pepper powder to taste
  • 1 teaspoon Red chile powder / Cayenne powder optional
  • 1 teaspoon Dried basil leaves or fresh basil leaves
  • ¼ cup Parmesan grated
  • Spring onions for garnish (optional)
  • Salt to taste

Instructions

  • Cook the three cheese tortellini according to the package instructions. Drain them and keep them aside.
    9 oz Three cheese tortellini
  • Meanwhile, heat oil and butter in a non-stick pan.
    1 tablespoon Olive oil, 1 tablespoon Butter
  • Add the onion and garlic cloves and saute for 6 - 8 minutes on medium flame until golden brown.

  • Add the mushroom, green peas, and sweet corn and saute for another minute.
    4 oz Mushroom, ¼ cup Frozen green peas, ¼ cup Frozen sweet corn
  • Add marinara sauce, alfredo sauce, pepper powder, red chile powder, dried basil leaves, and salt and mix well, and bring it to a boil.
    1 cup Marinara sauce, ¼ cup Alfredo sauce, Pepper powder, 1 teaspoon Red chile powder / Cayenne powder, 1 teaspoon Dried basil leaves or fresh basil leaves, Salt
  • Add the cooked tortellini and toss till it's well combined with the sauce.
  • Garnish it with Parmesan and spring onions, and drizzle olive oil. Serve immediately and enjoy.

Notes

  • Always taste the sauce before adding it to the recipe. Vary the amount as per your taste. I have used Tuscan herb sauce from Barilla. Use your favorite brand. 
  • You can even use canned tomato sauce instead of marinara. The taste will vary accordingly. 
  • Add sausage, beef, or baby spinach if desired. 
  • To have the dish spicy, vary the amount of red chili powder or use red pepper flakes. 
  • Serve it with cesar salad or garlic bread for a complete meal. 
  • I have used canned mushrooms. If you have fresh mushrooms, add them and saute them for 2 to 3 minutes. It will enhance the taste.
