Equipment

Ingredients

  • 1 cup Sweet Corn boiled
  • 1 cup Potatoes mashed
  • 1 cup Mozzarella Cheese grated or shredded
  • 2 tablespoon Coriander Leaves cilantro
  • 1 Green Chili serrano, finely chopped
  • ¼ cup Bread Crumbs
  • 4 tablespoon Corn Starch corn flour or all-purpose flour
  • ½ teaspoon Black pepper powder to taste
  • ½ teaspoon Garlic Powder
  • ½ to 1 tsp Salt adjust to taste

Instructions

Prepare the mixture

  • In a blender or mixie jar, add boiled sweet corn and pulse to a coarse paste.
    1 cup Sweet Corn
  • Transfer this to a bowl. Add mashed potatoes, grated cheese, cilantro, green chilies, pepper powder, salt, garlic powder, cornstarch, and breadcrumbs.
1 cup Potatoes, 1 cup Mozzarella Cheese, 2 tablespoon Coriander Leaves, 1 Green Chili, ¼ cup Bread Crumbs, 4 tablespoon Corn Starch, ½ teaspoon Black pepper powder, ½ teaspoon Garlic Powder, ½ to 1 teaspoon Salt
  • Mix it nicely to form a smooth dough-like mixture.

Shape the balls

  • Grease hands with oil. Take a small portion of the mixture and roll it into balls. Make sure there are no cracks; otherwise, it will absorb excess oil and lose its shape.

Coat the balls

  • Mix corn flour and water to make a slurry in one bowl, and add bread crumbs in another bowl.
  • Dip each ball in the slurry and then coat it in bread crumbs. This will bake your cheese balls crispy. At this point, you can keep the balls in the freezer and use them as and when required.

Frying corn cheese balls

  • Heat oil in a pan or wok on medium flame. Drop 5 to 6 balls based on the size of the pan and fry on medium flame until crisp and golden brown.
  • Serve hot with ketchup, mustard sauce or mayonnaise of your choice. You can pair it with chai, hot drinks, or any cocktails or mocktails.

Notes

  • Grease your hands with oil if needed when you shape the balls to avoid it from sticking.
  • Fill the center of each ball with extra cheese for a molten core.
  • These corn cheese balls can be air-fried, deep-fried, or shallow-fried.
  • Add chopped onions and bell peppers (also known as capsicum) for an extra flavor boost.
  • Jalapeno can be used as an alternative to serrano.
  • For an extra kick, you can even add a teaspoon of red chili flakes.
  • Once you coat the balls in breadcrumbs, you can freeze them and use them when required.
  • Do not overcrowd the pan. Always fry in small batches.
  • You can use all-purpose flour (maida) as an alternative to corn flour.
  • If the mixture becomes too wet, add extra flour or bread crumbs and mix.
