The golden corn potato cheese balls are made with sweet corn, mashed potatoes, mozzarella cheese, and a selection of herbs and spices to suit your taste. They are crispy on the outside, soft, cheesy, and flavorful inside, so addictive that they will disappear in no time.
Cheese balls are one of the best recipes for festive occasions, such as Diwali parties, Thanksgiving or Christmas dinners, game days, or even birthday parties. You can serve it as an evening tea-time snack, for kids' tiffin boxes, or even for a weekend party with cocktails and mocktails.

Ingredients
Sweet corn: fresh or frozen, both work for this recipe.
Potatoes: Russet preferred. Never overcook or undercook the potatoes. Best binding agent for recipes like these.
Cheese: good-quality, grated mozzarella cheese.
Corn flour, also known as corn starch, is used for binding.
Breadcrumbs: give a nice texture and crunch.
Green chilies, pepper powder, and garlic powder for flavor.
Herbs: Parsley, coriander leaves, or spring onions will work.

Prepare the mixture
- In a blender or mixie jar, add boiled sweet corn and pulse to a coarse paste.
- Transfer this to a bowl. Add mashed potatoes, grated cheese, cilantro, green chilies, pepper powder, salt, garlic powder, cornstarch, and breadcrumbs.
- Mix it nicely to form a smooth dough-like mixture.

Shape the balls
- Grease your hands with oil. Take a small portion of the mixture and roll it into balls. Make sure there are no cracks; otherwise, it will absorb excess oil and lose its shape.
Coat the balls
- Mix corn flour and water to make a slurry in one bowl, and add breadcrumbs to another bowl.
- Dip each ball in the slurry and then coat it in bread crumbs. This will bake your cheese balls crispy. At this point, you can keep the balls in the freezer and use them as and when required.

Frying corn cheese balls
- Heat oil in a pan or wok on medium flame. Drop 5 to 6 balls, based on the size of the pan, and fry on a medium flame until crisp and golden brown.
- Serve hot with ketchup, mustard sauce, or mayonnaise of your choice. You can pair it with chai, hot drinks, or any cocktails or mocktails.

Tips
- Grease your hands with oil if needed when you shape the balls to avoid it from sticking.
- Fill the center of each ball with extra cheese for a molten core.
- These corn cheese balls can be air-fried, deep-fried, or shallow-fried.
- Add chopped onions and bell peppers (also known as capsicum) for an extra flavor boost.
- Jalapeno can be used as an alternative to serrano.
- For an extra kick, you can even add a teaspoon of red chili flakes.
- Once you coat the balls in breadcrumbs, you can freeze them and use them when required.
- Do not overcrowd the pan. Always fry in small batches.
- You can use all-purpose flour (maida) as an alternative to corn flour.
- If the mixture becomes too wet, add extra flour or bread crumbs and mix.

Cheese balls in an air fryer
- Preheat the air fryer at 180 degrees for 10-15 minutes.
- Place the coated balls in a single layer in the air fryer basket. Spray some oil.
- Air fry for 10 - 13 minutes or until crisp and golden brown.
Baked cheese balls
- Preheat the oven to 400°F.
- Place the balls on a baking tray and bake for 15 to 18 minutes or until they turn crisp and golden brown.
