Creamy Avocado Pasta | Green Pasta

Avocado Pasta is a simple, creamy, delicious vegan pasta recipe that can be made in 15 minutes. This green pasta is perfect for a busy weeknight dinner or any casual dinner party.

  • 2 cups Pasta macaroni any pasta of your choice, 12-14 oz
  • 2 Avocado pitted and peel removed
  • 2 tablespoon Lemon juice
  • 1 to 2 Garlic cloves
  • ½ cup Cilantro parsley or basil
  • 2 tablespoon Olive oil coconut oil
  • Salt & pepper to taste
  • ¼ to ½ cup Pasta water

Instructions

  • In a pot, bring water to boil with salt. Add pasta and cook for 8 to 10 minutes or Aldente (follow the package instructions).

  • Drain the pasta. Reserve some water, and you can use it to make the sauce.
    ¼ to ½ cup Pasta water
  • Make avocado pasta sauce: Add avocado, lemon juice, garlic, cilantro, oil, salt, and pasta water to a blender or food processor and blend until smooth and creamy.
    2 Avocado, 2 tablespoon Lemon juice, 1 to 2 Garlic cloves, ½ cup Cilantro, 2 tablespoon Olive oil, Salt & pepper to taste
  • Add the cooked pasta to a bowl. Add the sauce and toss until combined. Serve and enjoy.

Notes

  • This pasta tastes best the day it is made and eaten. If there are any leftovers, you can store them for a maximum of 2 days. To brighten the flavor, drizzle some lemon juice before serving.
  • Add greens like spinach or kale while tossing pasta or blanch it and add it while making the sauce.
  • Feel free to add herbs or seasoning of your choice.
  • Avocado pasta sauce does not use basil here. However, it can be made by adding parmesan cheese and basil while blending to taste like avocado pesto.
  • For the crunch, add the toasted nuts of your choice.
  • To make it more nutritious, you can add green peas, corn kernels, asparagus, cherry tomatoes, roasted peppers, etc.
