    Avocado Pasta is a simple, creamy, delicious vegan pasta recipe that can be made in 15 minutes. This green pasta is perfect for a busy weeknight dinner or any casual dinner party.

    Avocado combined with lemon, garlic, and fresh herbs creates a fresh and zesty flavor in the sauce. Avocado pasta salad is vegetarian, dairy-free, and vegan. It can easily be made gluten-free if you use gluten-free pasta.
    The avocado naturally makes the creamy pasta sauce. You don't need any butter, mayonnaise, or cream to make this creamy avocado pasta.

    Ingredients

    Pasta: You can use any pasta you like. I have tried it with penne, macaroni, spaghetti, and fettuccine.

    Avocado: Ripe avocados for a creamy texture.

    Lemon juice: Brightens the flavor.

    Cilantro: Herbs add freshness. You can combine or use parsley or basil in the recipe.

    In a pot, bring water to boil with salt. Add pasta and cook for 8 to 10 minutes or Aldente (follow the package instructions). Drain the pasta. Reserve some water, and you can use it to make the sauce.

    To make avocado pasta sauce: Add avocado, lemon juice, garlic, cilantro, oil, salt, and pasta water to a blender or food processor and blend until smooth and creamy.

    Add the cooked pasta to a bowl. Add the sauce and toss until combined. Serve and enjoy.

    Tips

    • This pasta tastes best the day it is made and eaten. If there are any leftovers, you can store them for a maximum of 2 days. To brighten the flavor, drizzle some lemon juice before serving.
    • Add greens like spinach or kale while tossing pasta or blanch it and add it while making the sauce.
    • Feel free to add herbs or seasoning of your choice.
    • Avocado pasta sauce does not use basil here. However, it can be made by adding parmesan cheese and basil while blending to taste like avocado pesto.
    • For the crunch, add the toasted nuts of your choice.
    • To make it more nutritious, you can add green peas, corn kernels, asparagus, cherry tomatoes, roasted peppers, etc.

    Can you eat avocado pasta the next day?

    You can make the sauce, cook the pasta in advance, and store it in an airtight container. Just toss when you are ready to eat. Avocados will lose their taste and turn brown if kept for a longer time. For best results, enjoy within 24 hours!

    For a vegan version, add tofu (paneer) or boiled chickpeas. Otherwise, add cooked and shredded chicken if desired.
