Pasta: You can use any pasta you like. I have tried it with penne, macaroni, spaghetti, and fettuccine.
Avocado: Ripe avocados for a creamy texture.
Lemon juice: Brightens the flavor.
Garlic: Add fresh garlic or teaspoon of garlic powder for flavor.
Cilantro: Herbs add freshness. You can combine or use parsley or basil in the recipe.
Oil: Coconut or olive oil. Skip this to make oil-free pasta.
Salt, pepper, and red pepper flakes To taste

Step-by-step instructions
In a pot, bring water to boil with salt. Add pasta and cook for 8 to 10 minutes or Aldente (follow the package instructions). Drain the pasta. Reserve some water, and you can use it to make the sauce.
To make avocado pasta sauce: Add avocado, lemon juice, garlic, cilantro, oil, salt, and pasta water to a blender or food processor and blend until smooth and creamy.
Add the cooked pasta to a bowl. Add the sauce and toss until combined. Serve and enjoy.

- This pasta tastes best the day it is made and eaten. If there are any leftovers, you can store them for a maximum of 2 days. To brighten the flavor, drizzle some lemon juice before serving.
- Add greens like spinach or kale while tossing pasta or blanch it and add it while making the sauce.
- Feel free to add herbs or seasoning of your choice.
- Avocado pasta sauce does not use basil here. However, it can be made by adding parmesan cheese and basil while blending to taste like avocado pesto.
- For the crunch, add the toasted nuts of your choice.
- To make it more nutritious, you can add green peas, corn kernels, asparagus, cherry tomatoes, roasted peppers, etc.
