Dragon Fruit Cookies | Pitaya Cookies

Dragon Fruit Cookies are a delicious and unique twist on a classic cookie recipe. They are crispy on the outside and soft and chewy in the center. Try these pitaya cookies for Thanksgiving, Christmas, or Special occasions like Valentine's Day.

Ingredients

  • ¾ cup Butter softened
  • ½ cup Light brown Sugar
  • ½ cup Sugar
  • 1 Egg
  • 1 teaspoon Vanilla extract
  • 2 ¼ cup Flour
  • ½ teaspoon Salt
  • 1 teaspoon Baking soda
  • ½ cup White chocolate chips chunks, more for topping
  • 1 cup Dragon fruit chopped

Instructions

  • Preheat the oven to 350 degrees F.
  • Add flour, salt, and baking soda in a bowl and whisk until combined. Keep this aside.
    2 ¼ cup Flour, ½ teaspoon Salt, 1 teaspoon Baking soda
  • In a mixing bowl, cream together butter and sugar.
    ¾ cup Butter, ½ cup Light brown Sugar, ½ cup Sugar
  • Add egg and vanilla extract and whisk until combined.
    1 Egg, 1 teaspoon Vanilla extract
  • Add dry ingredients to the wet mixture and mix well using a spatula.
  • Fold in dragon fruit chopped and chocolate chunks.
    ½ cup White chocolate chips, 1 cup Dragon fruit
  • Drop a spoonful of dough on a cookie sheet or baking pan lined with parchment paper evenly spaced.
  • Place some chocolate chips or chunks on each one of them.
  • Bake for 15 to 18 minutes. Let the cookies cool in the pan for 5 minutes. Transfer to the wire rack and let them cool completely. These cookies can be stored in a tight conatiner for up to 7 days at room temperature.

Notes

  • You can even cover the dough with plastic wrap and keep it in the refrigerator for 2 to 3 hours or up to 3 days. Chilling will help prevent the cookies from spreading less.
  • You can add a splash of lemon juice or zest for a tropical twist.
  • Feel free to add chopped nuts or shredded coconut for additional flavor.
