With its vibrant color and texture, Dragon fruit has become a new favorite in our house for juice, smoothies, smoothie bowls, etc. So, I decided to try it in cookies and cakes this holiday season. It was a super hit in my family.
I highly recommend this dragon fruit cookie if you want to try something unique. To make this recipe, you need all the basic ingredients from your pantry.

Ingredients
Dragon fruit: pitaya, red, pink, or white, finely chopped into chunks.
All purpose flour: soft and chewy texture.
Sugar: Light brown sugar and regular sugar for sweetness and depth of flavor.
Butter: adds richness and tender crumb.
Egg: Binds the dough and provides structure.
Baking soda: Helps the cookie rise and makes it light.
Vanilla extract: Enchnace the flavor.
Salt: Balances sweetness and overall flavor.
White chocolate: chips or chunks complement dragon fruit very well.

Step-by-step instructions
- Preheat the oven to 350 degrees F.
- Add flour, salt, and baking soda in a bowl and whisk until combined. Keep this aside.
- In a mixing bowl, cream together butter and sugar.
- Add egg and vanilla extract and whisk until combined.
- Add dry ingredients to the wet mixture and mix well using a spatula.
- Fold in dragon fruit chopped and chocolate chunks.
- Drop a spoonful of dough on a cookie sheet or baking pan lined with parchment paper evenly spaced.
- Place some chocolate chips or chunks on each one of them.
- Bake for 15 to 18 minutes. Let the cookies cool in the pan for 5 minutes. Transfer to the wire rack and let them cool completely. These cookies can be stored in a tight conatiner for up to 7 days at room temperature.
Tips
- You can even cover the dough with plastic wrap and keep it in the refrigerator for 2 to 3 hours or up to 3 days. Chilling will help prevent the cookies from spreading less.
- You can add a splash of lemon juice or zest for a tropical twist.
- Feel free to add chopped nuts or shredded coconut for additional flavor.
