Ingredients

  • 1 cup Banana ripe mashed
  • ½ cup Butter unsalted, room temperature
  • ¾ cup Sugar
  • 2 Eggs lightly beaten
  • 1 teaspoon Vanilla extract
  • 1 ½ cups All-purpose flour
  • 1 teaspoon Baking soda
  • ½ teaspoon Salt
  • 1 cup Walnuts chopped

Instructions

  • Preheat the oven to 350 degrees F. Grease a bread loaf pan or line it with parchment paper, and set it aside.
  • Roast the walnuts in a skillet, stirring continuously to prevent burning. Keep this aside.

  • In a mixing bowl, cream together butter and sugar.
    ½ cup Butter, ¾ cup Sugar
  • To this add mashed bananas, eggs, vanilla extract, and mix until blended.

  • Add flour, baking soda, and salt, and mix until combined.
    1 ½ cups All-purpose flour, 1 teaspoon Baking soda, ½ teaspoon Salt
  • Add the chopped walnuts to the batter and mix until combined.
  • Pour into a bread loaf pan.
  • Bake for about 55 to 60 minutes or until a toothpick inserted comes out clean.
  • Let this sit for 10-15 minutes before transferring it to the wire rack to cool.
  • Serve for breakfast, as a midday snack, or as dessert, and enjoy.

  • Store any leftover in an airtight conatiner at room temperature for 3 days.
  • You can refrigerate for up to a week or freeze the slices for up to 2 months—reheat before serving.
  • Ripe bananas with more black spots make your bread sweeter and moister.
  • Don't miss toasting the walnuts. It makes a lot of difference.
  • You can add raisins, chocolate chips, or other nuts and coconut flakes, especially during the holidays, to make banana nut bread.
