Ingredients

For the fruit filling

  • 3 Apples peeled and cubed
  • 2 Persimmons chopped
  • Juice of 1 lemon
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Corn starch
  • 1 teaspoon Cinnamon
  • ¼ cup Brown sugar

For crisp oat topping

  • 1 cup Rolled oats
  • ½ cup Flour
  • 1 teaspoon Cinnamon
  • ¾ cup Brown sugar
  • ½ cup Butter melted

Instructions

  • Preheat the oven to 350 degrees F. Grease a 9-inch baking pan, or line it with parchment paper, and set it aside.
  • In a bowl, add apples, persimmons, lemon juice, vanilla extract, cornstarch, cinnamon, and brown sugar, and mix well.

  • In another bowl, add rolled oats, flour, cinnamon, and brown sugar, and mix well. Add melted butter and mix until combined.

  • Spread the fruit mix on a prepared baking pan and top with the oat topping.
  • Bake for 40 to 50 minutes.
  • Let it rest for 10 minutes.
  • Serve warm with ice cream and enjoy.

  • Feel free to add a pinch of nutmeg for both filling and topping.
  • Add ¼ teaspoon of dry ginger powder for Christmas flavor.
  • For extra crunch, add toasted walnuts, pecans or almonds on top.
