Preheat the oven to 350 degrees F. Grease a 9-inch baking pan, or line it with parchment paper, and set it aside.
In a bowl, add apples, persimmons, lemon juice, vanilla extract, cornstarch, cinnamon, and brown sugar, and mix well.

In another bowl, add rolled oats, flour, cinnamon, and brown sugar, and mix well. Add melted butter and mix until combined.
1 cup Rolled oats, ½ cup Flour, 1 teaspoon Cinnamon, ¾ cup Brown sugar, ½ cup Butter
Spread the fruit mix on a prepared baking pan and top with the oat topping.
Bake for 40 to 50 minutes.
Let it rest for 10 minutes.
Serve warm with ice cream and enjoy.
