Ingredients
For the fruit filling
- Apples: Any apple that holds its shape when baked works fine, such as fuji, gala, honey crisp or Macintosh.
- Persimmon: Fuyu or Hachiya.
- Sugar: light or dark brown sugar.
- Cinnamon: warmth and spice.
- Corn starch: thickens fruit juice as it bakes.
For the crisp oat topping
- Oats: rolled or quick oats. It gives a crunchy texture.
- Flour: Binds the topping
- Sugar: light or dark brown sugar for sweetness.
- Butter: melted. It makes the topping rich and crispy.

Step-by-step instructions

- Preheat the oven to 350 degrees F. Grease a 9-inch baking pan, or line it with parchment paper, and set it aside.
- In a bowl, add apples, persimmons, lemon juice, vanilla extract, cornstarch, cinnamon, and brown sugar, and mix well.

- In another bowl, add rolled oats, flour, cinnamon, and brown sugar, and mix well. Add melted butter and mix until combined.
- Spread the fruit mix on a prepared baking pan and top with the oat topping.

- Bake for 40 to 50 minutes.
- Let it rest for 10 minutes.
- Serve warm with ice cream and enjoy.
Tips
- Feel free to add a pinch of nutmeg for both filling and topping.
- Add ¼ teaspoon of dry ginger powder for Christmas flavor.
- For extra crunch, add toasted walnuts, pecans or almonds on top.

Make-ahead, Freeze and Store
- Make ahead: prepare the fruit mixture and oat topping, then assemble the crisp in a greased 9-inch baking pan. Cover with plastic wrap and refrigerate for up to 24 hours before baking.
- Freeze: Once the baked crisp has cooled completely, you can freeze it for up to 3 months. Thaw and reheat at 350°F. The unbaked crisp can also be frozen for 3 months. The baking time will be slightly longer than stated in this case.
- Store: Any leftovers can be stored at room temperature for a day and in the refrigerator for 3 to 4 days—reheat before serving.
