Roasted Pumpkin Recipe - 2 Ways

- 1 medium sized Pumpkin use ½ for wedges and other ½ for cubes
For the seasoning (make 2 different batches)
- 1 tbsp Garlic minced
- 1 teaspoon Pepper flakes
- 1 teaspoon Italian seasoning
- ¾ teaspoon Salt
- 2 tablespoon Oil Olive oil or coconut oil
How to cut the pumpkin?
Cut the pumpkin into half and scoop out the seeds.
1 medium sized Pumpkin
For the wedges: Cut the half portion of the pumpkin into wedges of the desired thickness. You do not have to peel the skin. Remove any flesh with a spoon.
For cubes: Place the other cut side down and cut them into slices. Now peel it using a potato peeler or knife and further cut it into bite-size cubes.
How to roast pumpkin wedges?
Make the seasoning: Add garlic, Italian seasoning, pepper flakes, and salt and toss in a bowl.

Place the wedges on a single layer on a baking sheet. Sprinkle the seasoning and drizzle oil.

Bake for 30-35 minutes or until tender with caramelized edges.
How to roast pumpkin cubes?
Make the seasoning: Add garlic, Italian seasoning, pepper flakes, and salt to a bowl and mix. Add the pumpkin cubes and oil and toss until combined.
