Instructions
Make the pastry dough
Add flour, sugar, and salt to a large bowl and mix.
1 ½ cups All purpose flour, ½ tsp Salt, 2 tsp Sugar
Cut in the butter pieces using a fork or a pastry cutter until the butter is evenly distributed. We aim for small speckles or pieces of butter combined with flour, sugar, and salt.
½ cup Cold butter cubed
Add ice-cold water over this flour mixture, 1 or 2 tablespoon at a time, and gently mix it with your hands until it forms a dough ball. You may also use a food processor to complete the above two steps.
3 to 4 tbsp Ice cold water
Warp the dough in plastic wrap and keep it in the refrigerator for about 30 minutes to 1 hour.
Make the galette filling
Add strawberries, sugar, salt, cornstarch, vanilla extract, lemon juice, and lemon zest, and mix everything together.
1 pound Strawberries sliced, ⅓ cup sugar, Salt, 2 tbsp Corn starch, 1 to 2 tsp Vanilla extract, ¼ tsp Lemon zest, 1 tbsp Lemon juice
Assemble the galette
Preheat the oven to 400 degrees F.
Unwrap the dough onto a floured surface and, using a rolling pin, roll it into 10 or 12 inch round and about ⅛th inch thick. Transfer this to a parchment-lined baking sheet.
Pile strawberry filling at the center of the pie, leaving 2 inches from the side.
Gently fold over the strawberries all the way around.
Whisk an egg, brush it on the folded galette crust, and then sprinkle it with sugar.
1 Egg for egg wash, 1 to 2 tbsp Sugar
Bake the galette
Bake for 32 to 35 minutes until the crust is golden brown and the fruit is bubbly and cooked.
Serve warm with whipped cream or ice cream, and enjoy. You can also garnish it with mint if desired.

Notes
The amount of sugar can be increased or reduced depending on the sweetness of the fruit.
You can combine berries instead of using only strawberries.
Like pie dessert, a galette can be served at any temperature - hot, room temperature, or right from the refrigerator. Once you remove it from the oven, make sure it sits for 15 minutes so that the juices thicken before you slice and serve.
Baking time may vary depending on the thickness of the crust and oven you are using. So watch your oven a bit earlier than the mentioned time.
The beautiful golden color crust comes from egg wash.
